    Domaine Laroche, Chablis `St Martin` 2015 PRODUCER Domaine Laroche epitomises Chablis, with impeccable quality and a remarkable 100 hectares of vineyards, including 30 hectares of Premier and six hectares of Grand Crus. Founded in 1850, there is still a dynamism which permeates everything they do. Michel Laroche merged with another family-owned producer, Jeanjean, in 2009 and he remains involved in the business, along with his wife Gwénaël. As part of their aim to retain purity and minerality in the finished wine, Laroche was the first Burgundian producer to move to screwcaps in 2002. VINEYARDS Saint Martin refers to the patron saint of Chablis, whose relics were kept in the domaine's ancient monastery for many years. Domaine Laroche owns 63 hectares of Chablis vineyard on the famous Kimmeridgian soil that gives the wines such precision. Each plot, of which there are 30 in total, has a different exposure, soil depth and vine age which contributes complexity to the wine and means that every parcel ripens at a different time. Gregory Viennois refers to Chardonnay's 'two-day window' of maturity - if the parcels aren't harvested in this time the precious Chablis aromas are lost. VINTAGE The 2015 vintage started with very good conditions during flowering, with dry and sunny weather. These conditions continued and were ideal for preventing diseases during ripening. On the morning of 1st September, a hailstorm affected the vineyards of Les Clos and Les Blanchots. This resulted in a partial loss of yield but didn’t impact the quality of the grapes due to careful sorting in the vineyard and in the cellar.

    Structure in Wine steiia thiAst What is Structure? • So what is this thing, structure? It*s the sense you have that the wine has a well-established form,I think ofit as the architecture ofthe wine. A wine with a great structure will often remind me ofthe outlines of a cathedral, or the veins in a leaf...it supports, and balances the fiuit characteristics ofthe wine. The French often describe structure as the skeleton ofthe wine, as opposed to its flavor which they describe as the flesh. • Where does structure come firom? In white wines, it usually comes from alcohol or acidity; in red wines, it comes from a combination of acidity and tannin, a component in the grapes' skins and seeds. Thus, wines with a lot of tannin (like cabernet) also have a lot of structure. Beaujolais is made from gamay which does not have much tannin. As a result, Beaujolais can lack structure; it feels soft, flat or simple in the mouth (though its flavors can certainly still be attractive). • While structure is hard to articulate, you can easily taste or sense it —^and the lack of it. • Understanding structure is critical to understanding any ofthe ''powerful" red varieties: cabernet sauvignon, merlot, syrah, nebbiolo, tempranillo, and malbec, to name a few. I just don't think you can understand these wines unless you understand structure, and how it frames and focuses the powerful rush of fruit. It adds freshness, and a "lightness" to the density ofripe fiuit. Structure matters when pairing wine and food. Foods with a lot of structure themselves— like a meaty, thick steak-need wines with commensurate structure (like cabernet), or the food experience can dwarfthe wine experience.

    2017 CABERNET SAUVIGNON ESTATE GROWN RUTHERFORD NAPA VALLEY A BRIEF HISTORY For decades, it has been our goal to produce a Rutherford AVA, estate-grown Cabernet Sauvignon. Inspired by the early Cabernets of Inglenook and Beaulieu Vineyard, we’ve spent the past 20 years finding, farming and obtaining highly sought after land in Rutherford—with particular attention to the Rutherford Bench—to pursue our dream and perfect our craft. It all began with the acquisition of the Red Barn Vineyard in 1994. This prime real estate provided us with 40 acres of soil perfectly suited to grow Merlot and Cabernet sauvignon and a century-old facility in which we would become Rutherford Cabernet Sauvignon producers for the first time. Immediately following our move to Rutherford, Frank Leeds—longtime Frog’s Leap Vineyardist—agreed to a partnership between Frog’s Leap and his family’s Chavez Leeds Vineyard. This generational vineyard situated on the iconic Rutherford Bench gave us our first real taste of how complex and connected dry-farmed, organically-grown Cabernet Sauvignon from this storied part of the appellation could be. Finally, in 2007, we purchased the historic Rossi Vineyard located in the very heart of the Rutherford Bench. This 50 acre vineyard was purchased by the Rossi family in 1906 and is located only a stone’s throw away from the two vineyards that originally inspired us. Now mostly planted to Cabernet Sauvignon and Cabernet Franc the Rossi Vineyard completed the picture by yielding high quality Rutherford grapes for an all estate-grown Cabernet Sauvignon to stand with our predecessors.
