JESUS VALLES Did you like the first full-color edition ofThe Update published last April? We are always thinking of new ways to attract and draw members to the activities of the club. We hope the full color edition caught your attention and gave you the desire to sign up for one of our events in April or in May. As you may have noticed, this edition is in color too. May is a celebration month. To start off our Cinco de Mayo celebration, we have a tequila tasting on Wednesday, May 2. Jerry Rodriguez, our Food and Beverage Director, has lined up 6 tequilas ranging from “blanco” to “extra añejo” or “ultra aged” which means that the tequila has to be aged a minimum of 3 years. Easter Brunch Beer Dinner 2 Executive Chef Kevin’s Recipe Corner Grape Almond Gazpacho

Ingredients Directions 1 garlic clove In a blender, working in batches, purée the garlic with the 5 cups of 5 cups cucumber, peeled, seeded and diced plus ¼ cup finely diced diced cucumber, the 1 ¼ cups of whole green grapes, ½ cup of the peeled cucumber, for garnish almonds and the bread cubes, scallions, watercress, water, olive oil and 1¼ cups whole green grapes, plus ¼ sherry vinegar until very smooth. Transfer the soup to a large pitcher and cup diced grapes, for garnish season with salt and pepper. Refrigerate until chilled, about 2 hours. ¾ cup marcona almonds 3 cups crustless ½-inch diced good To serve, chop the remaining ¼ cup of almonds. Stir the gazpacho, white bread then pour it into shallow bowls. Garnish the soups with the finely diced 4 scallions, white and tender green parts, cut into 1-inch lengths cucumber, grapes and the chopped almonds.
