Specifically, we aim to address the issue of dealing with vulnerability in logistics dependent on the degree of connectivity. To resolve this issue, we investigate (i) the current level of local railway station sustainability performance from the perspectives of the value of the station (node) and the geographical location (place), and (ii) how railway station network management can prepare for imminent internal and external risks. Integrating node–place analysis and social network analysis approaches, we demonstrate a means of assessing (i) local railway station performance by comparing how one station’s value differs from that of other stations, and (ii) overall railway network performance by measuring the degree of connectivity based on the centrality characteristics. Consequently, we recommend improvement in planning orders considering the degree of local performance and network vulnerability for railway station network sustainability.     The Rise of Soju 燒酒: The Transfer of Distillation Technology from “China” to Korea during the Mongol Period (1206–1368)* Hyunhee PARK 朴賢熙** Introduction Since 2012, Paul Buell has examined the key role that the Mongols played, dur- ing the age of their massive empire (early 13th to late 14th century), in improv- ing on a pre-existing Chinese technology through producing an easily portable apparatus for distillation.     Urbanities, Vol. 8 · No 2· November 2018 © 2018 Urbanities High-rise Buildings and Social Inequality: Focusing on the Street Quarter of Mapo-ro in Seoul Young-Jin Kim (Sungshin University, South Korea) [email protected] In this article I discuss the cause and the effects of the increase in high-rise buildings in the ‘street quarter’ of Mapo-ro in Seoul, South Korea. First, I draw on official reports and Seoul Downtown Redevelopment Master Plans to explore why this phenomenon has occurred. Second, I investigate the sociocultural effects of high-rise buildings using evidence collected through an application of participant observation, that is, a new walking method for the study of urban street spaces. I suggest that the Seoul government’s implementation of deregulation and benefits for developers to facilitate redevelopment in downtown Seoul has resulted in the increase of high-rise buildings. The analysis also demonstrates that this increase has contributed to gentrification and has led to the growth of private gated spaces and of the distance between private and public spaces. In the spring of 2017, a candlelight rally was held every weekend in Gwanghwamun square in Seoul to demand the impeachment of the President of South Korea. On 17th February, a parade was added to the candlelight rally. That day I took photographs of the march and, as the march was going through Mapo-ro,2 I was presented with an amazing landscape filled with high-rise buildings.

Makgeolli is made from cooked rice or wheat, then brewed with nuruk (Korean fermentation starter) for several days. But, nowadays, attempts have been made to use various raw materials and process innovations to make makgeolli for particular purposes. This study aimed to evaluate the quality of makgeolly made from partially gelatinized wheat flour and tapioca flour. Five different combination of wheat flour and tapioca flour were used to manufacture makgeolli. The results showed that different combination of partially gelatinized wheat flour and tapioca flour significantly affected the chemical and sensorial characteristics of makgeolli. Increasing proportion of wheat flour produced higher level of total acid, amino acidity, reducing sugar and total solid of makgeolli. Inversely, alcohol content was higher when higher level of tapioca flour was used. In general, sensorial characteristics of makgeolli made from partially gelatinized wheat flour and tapioca flour didn’t acceptable by panelists. Thus, brewing makgeolli by using partially gelatinized wheat flour and tapioca flour isn’t acceptable in term of sensorial characteristics.
