International Association of Culinary Professionals 26th Annual Conference April 21-24, 2004 Baltimore, Maryland General Session “Is Globalization Changing The Way The World Eats?” Speaker: Dr. Tyler Cowen Thank you all, and good morning. Let’s start with slide one. That’s me, the obsessive, and obsessive is the key word here. I’m food obsessive. I have several obsessions actually, but today we talk about food. When I get home, my wife will ask me, “how did it go?”, and my answer will be, “the breakfast was excellent!” So I travel a great deal, I cook a great deal, and I write an on-line dining guide. I’m one of those people who lives to eat. For a long time now, I have been writing about culture, and creativity, and diversity, and now I am writing about food. And my interest in food really stems from my life, and that is from my obsessive nature. I wanted to be going out there, eating in the best places possible. With this attitude every meal counts. But if every meal is going to count, you have to know how to eat. So let’s go to the next slide. I have a theory of food. It’s a fairly simple theory, it’s not perfect, and there are some exceptions. But what makes for great food? Three items: You need competition, experimentation, and pride. Competition – if you are in a strange city, or strange country, and you want to know where to eat, go to the cuisine that is represented by the greatest number of restaurants.

Global Cuisine 1: The Americas SECTION 1 NORTH AMERICA North American cuisine is a melting pot, based upon the diversity of the natural resources of the continent and the variety of the native and immigrant populations. There is no single “American” flavor in the region from Canada to Mexico, Pacific to Atlantic. However, each region has traditional dishes, flavors, ingredients, and cooking methods. Each is worthy of attention. There are coastal zones with abundant seafood; Asian pockets with fusion influences; the vast mountains, plateaus, and plains with beef, wheat, potatoes, and corn; Southern cuisine with African influences; and Mexican food with both native and Spanish flavors, to name just a few. North American cuisine began with the Native Americans and soon fused with the first European settlers at Plymouth, so the Northeastern United

Nearly all are no farther than a short cab ride away. Public transporta=on is also available; trains along Broad St or Market St will service some neighborhoods, and buses will service most others. Riders 65 and older ride free on all buses; just show your ID to the driver. 2. BYOB - Philly features a number of restaurants do not serve alcoholic beverages, but instead are Bring Your Own BoQle (BYOB). Guests are encouraged to bring their own wine, beer, or other drinks. Most of these restaurants offer excellent food at fair prices. Many are chef-owned and it's not unusual to find the chef/owner in the kitchen. You can buy beer at many local stores, including delis, and a complete offering of alcoholic beverages at the nearby State stores at 1218 Chestnut St and 5 N 12 St across from the MarrioQ.
