(Posted 4/10/17) U.S. Apple Association workers this spring and summer because the program’s annual 66,000 cap (33,000 U.S. Chamber of Commerce Utility Sprayer Alliance for each half of the fiscal year) fails to meet the demands of a growing economy. The cap for the first half of the fiscal year was reached on January 10 and the cap for the second half of the year was reached on March 13. The H-2B program relies on well-vetted returning workers who come to the U.S. for seasonal employment and then go home. These workers are not immigrants. They provide an opportunity for U.S. businesses to operate at a greater capacity, retain their full-time workers and contribute to their local economies. Seasonal workers help support many upstream and downstream jobs. Every H-2B worker is estimated to create and sustain 4.64 American jobs. Relief for seasonal businesses that use the H-2B program is urgently needed. We urge you to include H-2B cap relief in any spending measure for the remainder of fiscal 2017, as well as in the fiscal 2018 Department of Homeland Security Appropriations bill.     Grasshoppers, Thanksgiving Dinner, and Utah Turkeys By DALE W ADAMS In anticipation of holiday celebrations, an 1897 issue of the Deseret News Weekly ran a column detailing how a “housemother” could best prepare her Thanksgiving table. One hoped, of course, that a succulent roast turkey would form the center of that feast, but the columnist recognized that such a treat would not fit in every family’s budget. Not to worry: if a young bird was unavailable “and nothing short of a patriarch is available, do not despair; as an hour’s preliminary steaming will plump him, make him tender, and in good condition for roasting.” Yet “if even the honored bird—the turkey—flies too high for the housewife of limited resources, ‘mock duck’ can essay its place at a quarter of the cost.” As the Deseret News piece made clear, turkeys—in spite of their exalted place in American cuisine—were not always an item easily obtained. And in Utah, the ability of a home cook to present a turkey at the Thanksgiving feast might well be entwined with the intricacies of technology, markets, and transportation systems. How, then, did turkeys become a thriving element of Utah’s agricultural economy in the twentieth century? Natives and pioneers had uses for the bird, but the development of a profitable turkey industry required technological advancements, adequate financing, and the concerted action of organizations and individuals. Turkeys have a long history in the state of Utah. Paleontologists found turkey-like fossils in the Grand Staircase-Escalante National Monument in a formation dated to be some 76 million years old.

    1 Winter 2018 • Volume 11, Issue 2 Harriette Cushman An Extraordinary Ordinary Woman of Montana State University In 1922, the Extension Service at Montana State College in Bozeman hired Harriette Cushman to be Montana’s poultry specialist. Over the next thirty-two years, Cushman worked to build a profitable poultry industry that proved an economic godsend during Montana’s prolonged economic depression. A woman of many interests, Cushman also championed the Indian Center at Montana State University and advocated for libraries, museums, and the arts. She was also a lifelong supporter of 4-H, an environmental advocate, and a prolific writer. Harriette Eliza Cushman was born in Alabama in 1890. She graduated from Cornell University in 1914 with a degree in bacteriology and chemistry. In 1918 she earned a poultry specialist degree from Rutgers University and became one of the few women pursuing a career as a poultry scientist. As Montana’s poultry specialist, Cushman traveled the state, educating farmers on breeding, culling, egg and bird grading, poultry housing, proper feed, and poultry health. She authored numerous seminal poultry-raising manuals that emphasized the application of scientific methods and utilized local demonstration flocks for hands- on instruction. Montana’s poultry industry expanded significantly under Cushman’s guidance. Prior to Cushman’s tenure as state poultry specialist, individual poultry growers worked independently, selling birds locally for whatever price they could get. In the 1920s, Cushman helped to form the nation’s first egg and turkey wholesale cooperatives, enabling Montana poultry growers to negotiate top prices. As the first poultry grader for the newly formed Northwest Turkey Federation, Cushman secured nationwide markets for Montana’s premium quality “Norbest” continued on page 4 From the Department Head 2 Happy New Year! MORE: by Glenn Greenwald (The Intercept) The criminal complaint includes two felony theft charges that carry possible prison terms of five years each. The six defendants include Diane Gandee Sordi, 62, a retiree who spends most of her time volunteering at animal shelters; Andrew Sharo, 24, a Ph.D. student in the biophysics program at Berkeley; and Wayne Hsiung, a lawyer and lead investigator. In January 2017, the six activists entered a farm in Moroni, Utah, that supplies turkeys to Norbest, a large company that aggressively markets itself to the public as selling "mountain-grown" turkeys who are treated with particularly humane care. Its marketing materials feature bucolic photographs of Utah nature, designed to create an image that its turkeys are raised in fresh and healthy natural settings, accompanied by assurances that its "practices are humane" and ethical, "with the health and comfort of the birds of paramount importance." What the activists found at the farm was something radically different: tens of thousands of turkeys crammed inside filthy industrial barns, virtually on top of one another. The activists say the animals were suffering from diseases, infections, open wounds, and injuries sustained by pecking and trampling one another.
