Maybe even Japanese people haven’t thought seriously about it very much. Typical washoku at home is usually comprised of cooked rice, miso soup, some main and side dishes and pickles. A set menu of grilled fish at a downtown diner is also a type of washoku. Recipes using cooked rice as the main ingredient such as curry and rice or sushi should also be considered as a type of washoku. Of course, washoku includes some noodle and mochi dishes. The world of traditional washoku is extensive. In the first place, the term WASHOKU does not refer solely to a dish or a cuisine. For instance, let’s take a look at osechi- ryori, a set of traditional dishes for New Year. The dishes are prepared to celebrate the coming of the new year, and with a wish to be able to spend the coming year soundly and happily. In other words, the religion and the mindset of Japanese people are expressed in osechi-ryori, otoso (rice wine for New Year) and ozohni (soup with mochi), as well as the ambience of the people sitting around the table with these dishes. Food culture has been developed with the background of the natural environment surrounding people and culture that is unique to the country or the region.     Part 3 TRADITIONAL JAPANESE CUISINE Chakaiseki ryori is one of the three basic styles of traditional Japanese cooking. Chakaiseki ryori (the name derives from that of a warmed stone that Buddhist monks placed in the front fold of their garments to ward off hunger pangs) is a meal served during a tea ceremony. The foods are fresh, seasonal, and carefully prepared without decoration. This meal is then followed by the tea ceremony. (Japan, an Illustrated Encyclopedia , 1993, p. 1538) Honzen ryori is one of the three basic styles of traditional Japanese cooking. Honzen ryori is a highly ritualized form of serving food in which prescribed types of food are carefully arranged and served on legged trays (honzen). Honzen ryori has its main roots in the so- called gishiki ryori (ceremonial cooking) of the nobility during the Heian period (794 - 1185). Although today it is seen only occasionally, chiefly at wedding and funeral banquets, its influence on modern Japanese cooking has been considerable. The basic menu of honzen ryori consists of one soup and three types of side dishes - for example, sashimi (raw seafood), a broiled dish of fowl or fish (yakimono), and a simmered dish (nimono). This is the minimum fare. Other combinations are 2 soups and 5 or 7 side dishes, or 3 soups and 11 side dishes. The dishes are served simultaneously on a number of trays. The menu is designed carefully to ensure that foods of similar taste are not served. Strict rules of etiquette are followed concerning the eating of the food and drinking of the sake.

    Annex C – The History of the Hawaiian Culture August 15, 2011 Origins of the Ancient Hawaiians and Their Culture The first major Hawaiian island, Kauai emerged from the Pacific only six million years ago. This was millions of years before modern man walked out of Africa, but a blip in time compared to the 4.5 billion year history of our ancient planet. The Hawaiian Islands were formed above a 40 million year old volcano creating a hot spot under the Pacific Plate. As the pacific plate moves to the Northwest, the static hotspot continues to create islands. The effect of this is an island chain, one of which, the big Island, became the 5th highest island in the world. The next island in the chain, the seamount of Loihi is building and will surface in 10,000 years. The isolation of the Hawaiian Islands in the middle of the Pacific Ocean, and the wide range of environments to be found on high islands located in and near the tropics, has resulted in a vast array of endemic flora and fauna. Hawaii has more endangered species per square mile than anywhere else. Ancient tribal Polynesians arrived on this virgin scene after long, amazing sea voyages in their double-hulled canoes. The early Polynesians were an adventurous seafaring people with highly developed navigational skills. They used the sun, stars and wave patterns to find their directions. Ancient Polynesians even created incredible maps of wave patterns by binding sticks together. Bird flight paths and cloud patterns were used to discern where islands were located.

    Volume 16, Number 2 (2020) THINK PIECE: Diaspora, Exclusion and Appropriation: The Cuisine of the Korean Minority in Japan By Christopher Laurent, Postdoctoral Fellow, Center for Asia Pacific Studies, University of San Francisco (AY 2019-2020) Abstract Zainichi Koreans are descendants of Koreans that immigrated to Japan during the colonialization of the Korean peninsula. Although most are born in Japan and speak better Japanese than Korean, they remain marginalized in a society striving to remain homogenous. This essay places the cuisine of Zainichi Koreans in its broader social context. A number of scholars recognize the contribution of Koreans and their food to Japanese cuisine. However, while Koreans living in Japan are relegated to subaltern status, their food is expropriated and celebrated as part of Japanese society. This essay examines the power structure that frames the Japanization of Korean food.     Kabocha no Nimono This is a super easy side dish that can be served cold or warm, not to mention that is healthy and loaded with vitamin A and dietary fiber. My parents had a lot of Japanese influence when growing up as Taiwan was dominated by Japan. In Brazil, we grew up eating a variety of Taiwanese, Japanese and Brazilian food and most of the time I did not even know the name of the dishes. This recipe of kabocha no Nimono, meaning boiled or simmered kabocha was one of them. Kabocha is one of my favorite pumpkin and besides, making soup, air-fry, roast, in bread dough, I love the no Nimono recipe as it is very practical. If you get to try this simple and easy recipe please be careful when cutting the kabocha. Somehow, they are hardy and very hard to cut as compared to the other pumpkins. And yes, you can eat the skin… – What is kabocha? Kabocha is a Japanese pumpkin, and its texture is denser than the other species. It carries a sweet touch., and the flesh is dark orange. – That is no Nimono? “no Nimono” in Japanese means simmered…and is a classic Japanese dish. The pieces of kabocha are simmered in a broth that is savory and sweet. And they taste better when it’s made ahead and stored in the broth for a while, so each piece is loaded with the broth flavor. The kabocha has a very distinctive texture as compared to the other pumpkins, once cooked is very creamy and rich despite of the hard texture when raw.

Traditional food is an important aspect of the culture and it is considered a world heritage. Thus, a traditional meal is not only aiming for the taste, but also aiming to protect the nature and transmit knowledge to future generations. The climate in Japan varies considerably, which allowed each city to develop their own traditional dishes representing the area. This has encouraged culinary tourism, where people travel throughout Japan to experience different flavours. Culinary tourism benefited Japanese culture and economy by supporting local villages and smaller communities. A convenient way to experience dishes from different regions, is by buying ekiben (lunch boxes sold at the train stations) while riding the train from one city to another. Seasonal food is important for society, because the diet is based on each season of the year. To stay healthy throughout the year, Japanese children learn important values and skills such as cooperation, teamwork and responsibility in their school lunches during elementary school. Bento boxes (lunch boxes) influenced, to some extent, the personality of Japanese children either by helping them to socialize easier with their classmates or excluded them out of a group.
