Buckner’s Back to School Carnival and Backpack Giveaway

Buckner Children and Family Services hosted a Back to School Carnival and Backpack Giveaway for the foster kids and families they serve on Tuesday, August 6, 2019, at Buckner Children’s Village in Beaumont. Program staff and many volunteers came together to provide a good time of fellowship, food, and carnival games. Every child was given a backpack full of goodies and then an opportunity to go “shop” for even more supplies, which were all donated by several community organizations. A highlight of the evening was entertainment provided by Kingdom Zoo, a wildlife educational outreach who brought unique animals for the kids to learn about and play with. Overall, it was a great time for all and a great way to get ready to go back to school.

Buckner is always looking for volunteers and is a great place where the whole family can get involved. If you have kids, you are welcome to bring them along to help! For more information about volunteering with Buckner or learning more about the programs they have, please contact Jessica Abbott at 409-937-0355.

Lagniappe Cookbook Recipe (1983)

24 SPINNINGS | SEPT 2019 hose who know me know that I don’t cook. I never have because I have always lived with people that cook. However, now that I am getting older, I feel like it is time to learn the basics, try my Thand at a few dishes, and see what I can come up with during my time as a Spinnings staff writer this year. With any luck, this experiment will hopefully turn me into someone who enjoys cooking. Each month, I am going to pick a recipe from the copious amount of Junior League cookbooks from Leagues near and far and see what happens. This month, with the summer ending and school starting, I thought I would try a classic dessert, Chocolate Delight. It is perfect to bring to an end of summer party, your children’s classroom, or work function. This dessert is not hard to make (even for me).

RECIPE: CHOCOLATE DELIGHT Beaumont Lagniappe Cookbook (1983) Ingredients: First Layer 1 cup flour 1 stick of margarine 1 ½ Tablespoons of Sugar delight ½ cup chopped nuts Second Layer 1 package (8 ounces) cream cheese 2/3 cup of powdered sugar

Third Layer 1 container (8 ounces) whipped topping 2 boxes instant chocolate pudding (3 ounces each) 2 ¼ cups of milk

Instructions: First layer. Cream margarine; add flour and sugar, then nuts. Press into 9 X 13 inch casserole dish and bake at 350 degrees for 15 minutes.

Second layer. Cream cheese and powdered sugar and spread on cooled crust.

Third layer. Mix well half whipped topping and other ingredients and spread on second layer. Spread remaining whipped topping on top and refrigerate; cut into squares.

My experience making the chocolate delight was great! I recently got a standing mixer, so it made the process super easy. Chopped pecans was my nut of choice ,which turned out perfectly in the golden-brown crust. The cream cheese and powdered sugar layer coated the crust just enough, and the chocolate and whipped topping on top was delicious.

Since this recipe is from the 1980s, I had to adjust the recipe slightly. Chocolate pudding does not come in 3-ounce packages anymore, but instead it comes in 3.9 ounce packages. To account for this, I modified and increased the milk to 2 ½ cups of milk. The top layer of whipped cream was a little thin, so next time, I may try and use less whipped topping when I mix half with the chocolate pudding so I can have a thicker layer of it on the top.

This was the perfect recipe to start with, and I hope you give it a try too! If there is a Junior League recipe you would like me to make, please email me at [email protected].
