2 JUL/AUG 2020 Letter to the Membership

LETTER TO THE MEMBERSHIP by Maikel Correa, MAC Club Manager

Dear Members,

So far, 2020 has been a complete rollercoaster of a year. In January and February, we were reaching the top. Everyone was excited to kick off a new decade, celebrating the start of an amazing year full of endless potential. Then, the roller coaster dropped. Everything was turned upside-down, and 2020 felt like it was plummeting into a steep decline. We’ve been dealing with a global pandemic, resulting job losses and layoffs, issues of racism and police violence and more. Needless to say, everyone has been going through a lot.

Despite the wild ride, I can’t help but focus on how absolutely amazing our MAC Membership has been through it all. You’ve supported the Club, our staff and each other by placing countless orders for carry out food and bottles of wine, lifting each other’s spirits and staying involved through virtual events, and donating to support the staff and the Club we all value so highly. Thanks to all of you, we have a Club to come back to.

It’s so amazing to work for a place like this. The fact that the MAC takes care of its Members and its employees is a blessing. I know I speak for the whole staff when I say we are incredibly grateful for the wonderful Members we have. Even though this year is harder than we ever could have imagined, our Members have proven that it’s clearly still full of potential.

Sincerely,

Maikel Correa Club Manager

Ingredients How to grill great BBQ chicken 4 lbs of chicken (legs, thighs, wings or Coat the chicken pieces with olive oil and sprinkle salt over all sides. breasts) with the skin on Salt Prepare one side of your grill for high, direct heat. If you are using Extra virgin olive oil charcoal or wood, make sure there is a cool side to the grill where 1 cup barbecue sauce there are few to no coals. (see Maikel's favorite above)

Lay the chicken pieces (skin side down) on the hottest side of the grill to sear. Grill for 5-10 minutes, depending on how hot the grill is (you do not want the chicken to burn).

Once you have a good sear on one side, turn the chicken pieces over and move them to the cooler side of the grill. If you are using a gas grill, maintain the flame on only one side of the grill, and move the chicken pieces to the cooler side, not directly over the flame. Reduce the temperature to medium low (between 250 and 275 degrees).

Cover the grill and cook undisturbed for 20-30 minutes.

Turn the chicken pieces over and baste them with your favorite barbecue sauce. Cover the grill again and cook for another 15-20 minutes.

Repeat, turning the chicken pieces over, basting them with sauce, covering, and cooking for another 10-30 minutes.

The chicken is done when the internal temperature reaches 160 degrees for breasts and 170 degrees for thighs (test with a meat thermometer).

If you want, you can finish with a sear on the hot side of the grill. Put the pieces, skin side down, on the hot side and allow them to sear or blacken slightly for 1-2 minutes.

Kelf Key #1: Be Authentic. Be Genuine. Be Sincere. “Authenticity means speaking from the heart. It means telling the truth and maintaining your integrity.” Kelfer urges readers to be strategic when building relationships and to think about them in the long term instead of the short term, because you never know when somebody will be ready to work with you.

Kelf Key #2: Meet People! Kelfer says that while this may seem obvious, meeting more people is the important foundation for networking and relationship building. When meeting someone new, start by asking some questions and showing genuine interest. Being able to form amazing new relationships is a valuable benefit of being a Milwaukee Athletic Club Member.
