RUSTIC ITALIAN TORTELLINI Instructions SOUP

Prep Time 10 minutes 1. Add Italian sausage to a large soup pot Cook Time 30 minutes and cook over medium-high heat until 6 Servings browned. Drain any excess fat.

2. Add carrots, onion and celery. Cook and stir until onion has softened. INGREDIENTS:

Add broth, tomatoes and tomato sauce 3 large carrots and bring to a simmer over medium-high (peeled and diced) heat. Reduce heat to medium, cover, and simmer for about 15 minutes, until carrots 1 onion (finely diced) are almost tender. 1 rib celery (finely chopped) 5. Stir in tortellini. Cover and simmer for 5-6 1 ½ teaspoons italian seasoning minutes until tender. Serve. 1 teaspoon garlic (minced) 1 teaspoon salt 3 cups low sodium chicken broth 1 can tomatoes For a quick satisfying meal (diced, 28oz) 1 cup tomato sauce 3 cups fresh cheese tortellini

Carnevale, is celebrated in Italy 40 days before Easter, with a final party before Ash Wednesday and the restrictions of Lent. Italy celebrates Carnevale with a huge winter festival celebrated with parades, masquerade balls, entertainment, music, and parties.

Carnevale in Italy is all about fun! It’s the last hurrah before the more serious and less frivolous Lenten period, and it’s celebrated in exactly that way. The more vino, brulee, sweets, costumes and parties, the better! So join in the festivities but be careful, because “a carnevale ogni scherzo vale”— at Carnival, anything goes.

The Dolomites are a mountainrange range located in northeastern Italy.
