This agave occurs in northern Arizona, southeastern California, southern Nevada and Utah. There are two subspecies and three varieties. This plant tolerates cold temperatures down to 0°F, but is poorly tolerant of water in the winter time. Our guest speaker Tony has explored many locations in two of the four states for these varieties of Agave utahensis. He will be showing numerous stunning examples of these plants along with other succulents that he has found in their nearby habitats. As an expert Agave grower, he will also be explaining how to best cultivate these plants. As an extra bonus, Tony will be bringing small Agave utahensis var. eborispina and other interesting plants to offer for sale. Tony Krock is familiar to many of our members for his local expertise on growing succulents. Besides Agaves, Tony has built an extensive collection of rare cacti and succulents. He has worked for the last 11 years at Terra Sol Garden Center as one of their plant experts and the Succulent Curator. EVERYTHING ABOUT PULQUE AGAVOLOGY 'Water from the green plants…' Tequila's predecessor, pulque, or octli, was made from as many as six types of agave grown in the Mexican highlands. Pulque is one of about thirty different alcoholic beverages made from agave in Mexico - many of which are still made regionally, although seldom available commercially. The drink has remained essential to diet in the central highlands of Mexico since pre-Aztec times. Pulque is like beer - it has a low alcoTeqhol content, about 4-8%, but also contains vegetable proteins, carbohydrates and vitamins, so it also acts as a nutritional supplement in many communities. Unlike tequila or mezcal, the agave sap is not cooked prior to fermentation for pulque. Pulque, is an alcoholic spirit obtained by the fermentation of the sweetened sap of several species of 'pulqueros magueyes' (pulque agaves), also known as Maguey Agaves. It is a traditional native beverage of Mesoamerica. Though it is commonly believed to be a beer, the main carbohydrate is a complex form of fructose rather than starch. The word 'pulque' comes from the Náhuatl Indian root word poliuhqui, meaning 'disturbed'. There are about twenty species of agave and several varieties of pulque. Of these there was one that was called "metlaloctli" ie "blue pulque," for its colouration. Plant Sources of Pulque The maguey plant is not a cactus (as has sometimes been mistakenly suggested) but an Agave, believed to be the Giant Agave (Agave salmiana subspecies salmiana). The plant was one of the most sacred plants in Mexico and had a prominent place in mythology, religious rituals, and Mesoamerican industry. -

ABSTRACT. In this review it is proposed that Agave sp. should be considered a strategic bioresource to support future production of biomaterials with special attention to the lactic acid platform but before doing that it is quite urgent to rescue and support the traditional system of intercalated cultures of maize, weeds and Agave, called Metepantle, because it is very resilient toward climatic and economic changes and provides the basis for the subsistence of thousands of peasants living in the Central Highlands of Mexico. The analysis of three large Agave bio-industries for pulque (fermented Agave sap from A. salmiana), henequen (fibers from A. sisalana) and tequila (spirits from A. tequilana) shows that large monoculture systems are not socially, economic or ecological as sustainable as Metepantle. Hence it is concluded that agroforestry with Metepantle is a sustainable system -

Tequila 101 It seems no other liquid is surrounded by as many stories, myths, legends and lore as Tequila and its sister beverage Mezcal. Yet as wine and whisky have taken their place in modernized western culture, so too has Tequila. While plenty have sampled various breeds of this zesty spirit in the form of a margarita, many more are discovering that good Tequila is a drink to be enjoyed like a fine Cognac or Scotch. The largest | highest tequileria in the world! 8054' & 500+ bottles The Aztec people were first to make a fermented beverage from the agave plant long before the Spanish arrived. However, the Spanish had been introduced to the art of distillation by the Moors in 800 A.D. and they brought the technology with them Aging _________ when Cortez landed in 1519. When their brandy ran out they began to distill the Aztec beverage EXTRA AÑEJO to create North America’s first indigenous distilled spirit. First produced near the future city of Tequila, Aged 3 Years or more this would eventually become it's name. Around 1600, Don Pedro Sanchez de Tagle began mass- AÑEJO "Vintage" producing at the first factory in the territory of Aged 1-3 Years modern-day Jalisco. Today the name Tequila is internationally protected REPOSADO by the country of Mexico. Case Study: Tequila Sarah Bowen North Carolina State University, United States November 2008 1 Institutional context National GI legislation In Mexico, geographical indications (GIs) are protected as “denominaciones de origen” (DOs). The dénominación de origen for tequila was the first granted in Mexico, officially published in the Federal Register in 1974. The legal definition of DOs in Mexico is based on that established in the Lisbon Agreement. “Denominación de origen” is defined as “the name of a geographical region of the country which serves to designate a product originating therein, the quality and characteristics of which are due exclusively to the geographical environment, including natural and human factors” (Article 156 of the Industrial Property Law, cited in Rodríguez Cisneros 2001). Mexican GIs are property of the Mexican state. However, the Mexican Institute of Industrial Property (IMPI), which was primarily established to protect and regulate patents and trademarks, is the body responsible for authorizing their use (Rodríguez Cisneros 2001). The official norms that regulate production are defined by the federal government, in consultation with supply chain actors of the product in question. Mexican law requires that the quality, characteristics, production processes, and geographical origin of GIs be certified by an accredited organization (Monjarás Osario 2007). The organizations that monitor and certify compliance with production norms and quality standards—the regulatory councils (consejos reguladores) are private organizations1. The first reference to made to “denominaciones de origen” is found in the Industrial Property Law of 1942, which introduced the concept. However, it was not until the law was reformed in January 1973 that the procedure for protection of GIs was introduced. -

Because neighboring coun- tries often share ecosystems and species, they also share ecosystem services. For example, the United States and Mexico share the provisioning service of groundwater provided by the All-American Canal in California; the regulating service of agave crop pollination by long-nosed bats; and the aesthetic value of the North American monarch butterfly, a cultural service. We use the Millennium Ecosystem Assessment (MA) to elucidate how dri- vers in one country can affect ecosystem services and human well-being in other countries. We suggest that the concept of ecosystem services, as articulated by the MA, could be used as an organizing principle for trans- boundary conservation, because it meets many of the criteria for successful transboundary policy. -

Syn (Agavaceae) is cultivated for its fiber, ornamental and medicinal value. The plant contains saponin useful for soap making and pharmacological importance. It yields a stiff fiber traditionally used in making twine, rope and also dartboards. Despite their economic importance, the Agave spp. has not been genetically improved. In vitro propagation offers an alternative to this problem through the efficient cloning of selected high-yielding “elite” plants. The present review gives a brief account on this important fiber yielding and medicinal plant with special emphasis on the secondary metabolite and in vitro propagation. Agave Ancient History
Agave Ancient History Agave is derived from the Greek “agavos” meaning "illustrious." The Aztec goddess, Mayheul, represented Agave's symbol of long life and health, dancing and fertility. For the Nahuatl, the original inhabitants of western Mexico, the plant was worshipped, representing goddess Mayaheul’s earthly power of wind, rain and crops. Human remains dating back at least 10,000 years show the early uses of agave for food and fiber. The agave plant has long been part of human culture and was already ancient when the Spaniard Conquistadors arrived in 1492. By 1520, it was exported into the Old World. Agave is mentioned as a food of the Aztecs and natives in the Florentine Codex of 1580. Cultivated in the high western areas, the succulent broad-leafed plant grows eight years to ripen. During the New World exploration in the late 1400's and early 1500's, Spanish conquistadors encountered the Nahuatl-produced fermented agave beverage ‘pulque’. It’s primarily use was in religious ceremonies and for medicinal purposes in Nahautl culture. By the late 1500’s, Spaniards running short out of brandy, searched for fermentable sugars for distilling. They experimented with wild agave, which was abundant in the volcanic soils in the Sierra Madre region surrounding Guadalajara. The species that produced the most full-bodied taste was the Blue Tequilana Weber Agave, the blue agave or agave azul. By 1600 the first tequila distillery was established by Don Pedro Sanches de Tagle, Marquis of Altamira. Don Pedro also was the first to begin cultivation of agave Espadín the processor of Blue Tequilana Weber Agave.
