Flap Jacks RECIPE BY CHEF GALE GAND The British flap jack is a classic ... on the other side of the pond. Nothing like a pancake, this bar cookie (or “tray bake,” as the Brits say) made without eggs or flour, making them dense and chewy and grainy, the most buttery-sugary kind of granola bar possible.

• 6 Tbsp unsalted butter • 4 Tbsp light corn syrup • 4 Tbsp dark brown sugar • 4 cups old fashioned rolled oats

Preheat oven to 350 degrees. Line a sheet pan or 8 X 12-inch pan with parchment paper making sure you have several inches overhang on the two long sides for grabbing later. Melt the butter, syrup, and sugar together in a saucepan. Add the oats and stir well to combine. Pour into lined baking pan and spread evenly. Bake for 15-20 minutes or until light golden brown. Let cool 10 minutes, then lift the entire bake out of the pan using the parchment paper overhang and cut bars while still warm. Return to pan and let cool completely before removing.
