SENATE JOINT RESOLUTION 64 By Yager A RESOLUTION to honor and commend the Tennessee "Polk Salad" Association upon its annual festival and pageant that preserves and continues the delicious legacy of poke sallet. WHEREAS, it is fitting that this General Assembly should pay tribute to those worthy organizations that work with purpose and conviction to keep our Southern culture, especially Southern cuisine, alive for present and future generations; and WHEREAS, one such worthy organization is the Tennessee "Polk Salad" Association, which founded the Tennessee "Polk Salad" Pageant in memory of Violet Webb, who in bygone days picked and cooked poke sallet (correct spelling) for her family; and WHEREAS, the spelling of this "polk salad" pageant and festival mimics the spelling of the song Polk Salad Annie , which was written and performed by Tony Joe White and also popularized by Elvis Presley; and WHEREAS, poke sallet is a green that grows wild in the South along river banks and fence rows and in fields; "sallet" is a word used to describe a green food that must be cooked before being eaten; and WHEREAS, fondly known as “Spring Tonic” in the South, poke sallet must be parboiled in fresh water three times before being eaten and is usually prepared with bacon and/or eggs; and WHEREAS, although they are toxic to humans, poke berries can be used for ink or dye, and poke ink was used for some of the signatures on The Declaration of Independence; and WHEREAS, the first “Miss Polk Salad” crowned was Priscilla Martin of Rockwood in 2004; the first -

Sam Moore BIO For years Sam Moore was best known for his work with the historic soul duo Sam & Dave. The rapid-fire style, built on the call and response of gospel, was fashioned and pioneered by Sam and became the trademark of the duo. Songs like Hold On I’m Coming, I Thank You, When Something Is Wrong With My Baby, Soul Sister, Brown Sugar, Wrap It Up and his monster hit Soul Man catapulted them up both the Pop and R & B Charts. Sam & Dave sold more than 10 million records worldwide. The music and sound of Sam & Dave became so popular that the duo served as the inspiration for The Blues Brothers parody by Dan Aykroyd and John Belushi. Though he has tremendous love and respect for the music he created as “the voice” of the duo, Sam, who has been called “the blast furnace of soul,” has maintained his appeal and his stardom as a solo artist and continues to tour scoring critical acclaim for his work. He recorded Rainy Night In Georgia, as a duet with Conway Twitty, which earned them a platinum record as well as two Country Music Association Awards nominations. This was Twitty’s last recording. THE PITIFULS Hold My Heart To The Fire LocoBop L2I-012 Malaco Records’ house band in Jackson, MS was one of the best tight knit rhythm sections that southern studios were noted for in the 1960s and ‘70s. James Stroud (drums), Carson Whitsett (keyboards), Dino Zimmerman (guitar), and Don Barrett (bass) shaped hits by ZZ Hill, Dorothy Moore, Paul Simon, Paul Davis, Little Milton, Bobby Blue Bland, Johnnie Taylor, and Eddie Floyd. In the early 1980s, Stroud seized an opportunity to work with some of Nashville’s biggest names. Barrett, Zimmerman, and Whitsett, coincidently but individually, made Nashville their home as well. No longer a unit, they independently recorded with KT Oslin, Eddie Rabbitt, Janis Ian, Kathy Mattea, BB King, Eric Clapton, Suzy Bogguss, John Mayall, and Waylon Jennings. Whitsett also collaborated with Dan Penn, Tony Joe White, and others writing hits for Solomon Burke, Lorrie Morgan, John Anderson, Joe Cocker, and Conway Twitty. THE NEXT FOOL I FORGOT TO BE YOUR LOVER In 1996, Whitsett, Zimmerman, and Barrett reunited for a CLEAN SLATE one-off project with drummer Jimmy Hyde of Eddie SMOKE FILLED ROOM Rabbitt’s band and keyboardist Gene Sisk (Sawyer Brown, LOVE AT WORK The Judds, Earl Scruggs).
