Introduction Wellfood is a project funded by the IPA Adriatic-Cross-Border Cooperation Program and realized in collaboration with the Province of Forli-Cesena (Lead Beneficiary, Italy), University of Primorska (Slovenia), Chamber of Economy of Montenegro (Montenegro), Regional Chamber of Commerce of Uzice (Serbia), Innopolis (Greece), Agricultural University of Tirana (Albania) and from Bosnia and Herzegovina two partners, LIR Evolution and Ministry of Agriculture, Forestry and Water Management of Republic Srpska. Herzegovina is part of Adriatic region with rich tradition in production of cheese, grape, vine, fruit and vegetables. Many of the products are still produced in traditional way, preserving nutritive values and taste of the ingredients. WELLFOOD project is promoting the traditional products but also linking the businesses, researchers and supporting innovation capacity of the region. The products are presented within WELLFOOD HUB as virtual place where professionals from agri-food sector can exchange ideas, information and begin cooperation. Itinerary Cheese from bellows (sack chees) It is produced on individual farms, from not skimmed, not pasteurized, whole milk according traditional recipe. Tradition of making this kind of cheese is as long as cattle breeding. Cheese is put in a light brown sack of sheepskin, whose front side is turned inside out. It is produced in the villages of Herzegovina, especially in the area around the town of Nevesinje. Raw milk for sack cheese comes from sheep’s or cows, or the combination of the two. Sheep milk comes from pramenka sheep, and the cow milk from two native breeds: buša and gatačka cattle (both breeds in decline however). It is piquant whole milk cheese, high nutritive values served as cold starter meal, not for thermal processing because in that case it nutritive values disappear. Herzegovina region is divided between two entities, Republika Srpska and the Federation of BH . Republika Srpska's part of Herzegovina, commonly referred to as East Herzegovina and it is administratively divided into municipalities of Trebinje, Bileća, Gacko, Nevesinje, Ljubinje, Berkovići, Istočni Mostar and Foča. This area has Mediterranean climate, hot summers and short winters. Town Trebinje, the biggest town in this area, one of the hottest towns in Bosnia and Herzegovina: • Crkvina complex – Hercegovačka Gračanica, icon gallery, amphitheater, Vladičanski court, belfry, bookstore • Perovića (Arslanagića) bridge from XVI century • Dučić park, Temple Holy Transfiguration (Preobraženja) from the beginning of XX century, Catholic cathedral from the end of XIX century, a hundred years old plane trees; • Old town with Osman pasha mosque from XVIII century, several orthodox monasteries (Tvrdoš from XVI century, Duži from XVI - XVII century, Petropavlov from IV-VI century). National park Sutjeska is the oldest and the biggest national park in BH that is known of its natural values and beauty. It includes Sutjeska region with natural reservation Perućica, parts of Maglić mountain (2386 m- highest point in BH), mountains Volujak, Vučeva and Zelengora. Thanks to extraordinary natural values and stage of preservation, as from 2000, NP Sutjestka has been listed as II category in International Union for Conservation of Nature list. http://www.npsutjeska.net/ River Tara: marked as “gem of Europa”, this wild turquoise colored river is powered by massive water coming from high mountains placed in Durmitor national part in Montenegro. The river Tara flows between Bosnia and Herzegovina and Montenegro, 30 km within BH, and rest trough Montenegro. Area of this Canton is well known as environmentally clean and intact by pollutants characteristic for urban areas. Spicy image these peppers bring along perfectly describes the beauty of this area. Central Bosnian Canton is part of Federation of Bosnia and Herzegovina and it is administratively divided into municipalities of Bugojno, Busovača, Dobretići, Donji Vakuf, Fojnica, Gornji Vakuf-Uskoplje, Jajce, Kiseljak, Kreševo, Novi Travnik, Travnik and Vitez. Characteristic of the Canton are extremely mountainous-hilly area (300-2110 m), the highest peak on the mountain Vranica Nadkrstac. The largest rivers are Vrbas and Lašva. Climatic characteristics of the alpine continental climate with micro level varieties are related to river valleys and altitude. Town Donji Vakuf is located in Central Bosnia Canton and lies on the river Vrbas. According to the preliminary results of the census in 2013, the municipality of Donji Vakuf has 14,739 inhabitants. After the signing of the Dayton Agreement municipalities of Donji Vakuf, almost in its entirety, became part of the Federation of Bosnia and Herzegovina. In the composition of the Republic of Srpska entered the village Ljuša. РЕПУБЛИКА СРПСКА МИНИСТАРСТВО ПОЉОПРИВРЕДЕ, ШУМАРСТВА И ВОДОПРИВРЕДЕ In the vicinity of Donji Vakuf there are 16 necropolis of stelae, fragments of the Gothic basilica in Oborcima, Torlak tomb of Alija in Torlakovac, and the largest number of cultural and historical monuments from the Roman and Ottoman period is in Prusac (4 km from Donji Vakuf): fortress and old town which was started by Venetians and finished by Ottomans, the clock tower, shrine Kjafi Hasan Efendi, shrine Ajvaz-dede and Ajvaz- deda’s rock Ajvatovica popularly known as the small Kaaba, because it represents the biggest Muslim pilgrimage site in Europe, and also the largest traditional gathering Bosniaks.
