The winery produces Brunello di Montalcino DOCG, Brunello di Montalcino Riserva DOCG only for the vintages considered outstanding (the last Reserves are from 1995, 1997, 1999, 2001, 2003, 2004, 2006, 2007) and Rosso di Montalcino DOC: these wines are all made with Sangiovese Grosso (100%). Respecting Tuscan winemaking traditions and the “terrior”, the winery is able to elicit from the Sangiovese grape its firm and elegant character which result in first-class wines.

Other products include an extra-virgin olive oil made from a careful

selection of olives from groves of different varieties, especially moraiolo, correggiolo, frantoio and leccino. Also a high quality grappa is obtained from the marc of the Brunello.

Currently, the estate spread about 200 hectares. 29 hectares are producing vineyards of which 13.5 hectares are registered DOCG for the production of Brunello of Montalcino. The remaining land is principally used for cultivation of olives (40 hectares) and for seeding (45 hectares). The vineyards are of Sangiovese Grosso grapes (commonly known in the area as “Brunello”) the Brunello and Rosso di Montalcino are obtained from these vines. The vineyards of Cabernet Franc, Merlot and Canaiolo produce grapes that are destined for the realization of the Red IGT Super Tuscan wine. The soil and climate possess the characteristics of allowing the natural deepening of roots, the water supply and drainage create perfect conditions for the production of high- quality wines.

The difficulty with Australian cuisine is that it is almost impossible to describe what Australian cuisine is because Australia is a multi- cultural immigrant country, so Australian cuisine is an influence of everyone else’s cuisine.

Australian-style food is very much like Californian-style of food, very heavy in European influence. While meat pies are Australian, I honestly don’t think there is an Australian-styled cuisine. I think the key of Australian style food is keeping it simple and true to its original flavours which is not far from the Hyatt’s F&B concept. We are very focused on individual products and highlighting the products for its beauty.
