Metabolism of Monosaccharides and disaccharides Glucose is the most common monosaccharide consumed by humans. Two other monosaccharides that occur in significant amounts in the diet are fructose and galactose. Galactose is an important component of cell structural carbohydrates. Catabolism of fructose and galactose are essential pathways of energy metabolism in the body (both illustrated with blue in the adjacent diagram). About 15-20% of calories in the diet are supplied by fructose (55 g/day). The major source of fructose is the disaccharide sucrose. Entry of fructose is not dependent on insulin. Galactose is an important component Of cell structural carbohydrates. Fructose needs to be phosphorylated to enter the pathway either by hexokinase or fructokinase. Hexokinase has low affinity towards fructose (high Km) therefore unless high concentrations of fructose exist very little fructose will be converted to Fructose 6-P. Fructokinase provides the main mechanism of phosphorylation to fructose 1-P, Fructose 1-P does not convert to Fructose 1,6 bisphosphate but is metabolized to Glyceraldehyde and DHAP by aldolase B. DHAP can enter glycolysis or gluconeogenesis while Glyceraldehyde can be metabolized by a number of pathways. The rate of fructose metabolism is more rapid than that of glucose because trioses formed from fructose 1-phosphate bypass PFK1, the rate limiting step in glycolisis. Malaysian Journal of EconomicGender, Studies the Status 53(1): of Women,33 - 50, 2016 and Family Structure in Malaysia ISSN 1511-4554 Gender, the Status of Women, and Family Structure in Malaysia Charles Hirschman* University of Washington, Seattle Abstract: This paper addresses the question of whether the relatively high status of women in pre-colonial South-east Asia is still evident among Malay women in twentieth century Peninsular Malaysia. Compared to patterns in East and South Asia, Malay family structure does not follow the typical patriarchal patterns of patrilineal descent, patrilocal residence of newly married couples, and preference for male children. Empirical research, including ethnographic studies of gender roles in rural villages and demographic surveys, shows that women were often economically active in agricultural production and trade, and that men occasionally participated in domestic roles. These findings do not mean a complete absence of patriarchy, but there is evidence of continuity of some aspects of the historical pattern of relative gender equality. The future of gender equality in Malaysia may depend as much on understanding its past as well as drawing lessons from abroad. For this purpose, the hydrolysis was performed through the direct addition of the fermented ESBPPs obtained by fungal solid-state fermentation (SSF) as an enzyme source. By directly using this fermented solid, the stages for enzyme extraction and purification were avoided. The effects of temperature, fermented to fresh solid ratio, supplementation of fermented ESBPP with commercial cellulase, and the use of high-solid fed-batch enzymatic hydrolysis were studied to obtain the maximum reducing sugar (RS) concentration and productivity. The highest RS concentration and productivity, 127.3 g L 1 and 24.3 g L 1 h 1 respectively, were obtained at 50 C · − · − · − ◦ and with an initial supplementation of 2.17 U of Celluclast® per gram of dried solid in fed-batch mode. This process was carried out with a liquid to solid ratio of 4.3 mL g 1 solid, by adding 15 g · − of fermented solid and 13.75 g of fresh solid at the beginning of the hydrolysis, and then the same amount of fresh solid 3 times every 2.5 h. -

Color and Ash – Is there a relationship between them? Marianne McKee, Ronnie Triche and Charley Richard Sugar Processing Research Institute, Inc New Orleans, La 70124 Many questions surround color and ash and a possible relationship between these two components of sugar. Color and ash content of beet and cane sugars including beet, juice, and extract campaign beet sugars as well as raw and refined cane sugars were studied. The appropriate ICUMSA method of determination for color and ash was used for each type of sugar. For beet sugars, ash ranged from 0.003% to 0.015% while color ranged from 20 IU to 57 IU. For the refined cane sugars tested, color ranged from 18 IU to 58 IU while ash ranged from 0.007% to 0.011%. Raw cane sugars ranged from 800 IU to 3335 IU with ash values of 0.173% to 0.317%. These sugars were washed using a high brix white sugar solution to remove the syrup surface layer similar to the affination step in the cane refinery. The samples were dried and then tested for ash and color again after washing. Color and ash removed by washing is believed to be contained in the syrup surface layer surrounding the crystal. These components in the syrup layer are believed to be involved in reactions that promote color increase during storage of sugar. This presentation will show the differences in ash and color in the whole sugar sample as well as in the syrup layer for the various types of sugars studied. INTRODUCTION One of the goals of sugar production is to produce sugar that is low in color and ash whether from sugar beets or sugarcane. -

These tests are based on the most important chemical property of sugar, the reducing property. Benidict and fehling tests are used to determine presence of reducing sugar while Barfoed test is used more specifically to distinguish monosaccharides and disaccharides. Reducing and Non- reducing sugars Sugars exist in solution as an equilibrium mixture of open- chain and closed-ring (or cyclic) structures. Sugars that can be oxidized by mild oxidizing agents are called reducing sugars because the oxidizing agent is reduced in the reaction. A non-reducing sugar is not oxidized by mild oxidizing agents. All common monosaccharides are reducing sugars. The disaccharides maltose and lactose are reducing sugars. The disaccharide sucrose is a non-reducing sugar. Common oxidizing agents used to test for the presence of a reducing sugar are: Benedict's solution, Fehling's solution. Benedict's Test Benedict's test determines whether a monosaccharide or disaccharide is a reducing sugar. To give a positive test, the carbohydrate must contain a hemiacetal which will hydrolyse in aqueous solution to the aldehyde form. Benedict's reagent is an alkaline solution containing cupric ions, which oxidize the aldehyde to a carboxylic acid. In turn, the cupric ions are reduced to cuprous oxide, which forms a red precipitate. This solution has been used in clinical laboratories for testing urine. ! All sugars are not created equally. Natural sweeteners like honey, agave, or cane sugar are not any better for you than "other" sugars. There is a widespread belief that "natural" is better - and that natural things can't be bad for you. Sugar is one of those very wrong assumptions. Many, many times I've heard people in the supermarket remark that agave or honey is better for you because they're "natural" sugars. But is it true?. Your Body On Sugar: Natural Sweeteners 101 Glucose is the main energy source of your body. Your brain requires glucose to function, and in fact, a huge percentage of your daily calories go to powering your brain. Pretty cool huh? So there's glucose - the "sugar" in your blood that gives you energy. Your body generally gets it from eating carbohydrates (although the body can make it from other sources if it has to). Then there's dextrose - glucose produced from plant sources (like corn). Then you've got fructose - fructose is the form of sugar generally found in fruits and honey. (Think F = Fruits) Then there's sucrose, which is half glucose, half fructose - following me? Sucrose is table sugar, the white grainy stuff you usually associate with being sugar. So here are the general rules: Glucose = from carbs. Fructose = from fruits, honey, agave, and high fructose corn syrup. Dextrose = usually produced commercially then added to food to sweeten it. Sucrose = white table sugar, produced from the sugar cane plant (& other sources).
