Beard nurtured a genera- tion of American chefs and cookbook authors who have changed the way we eat. James Andrew Beard was born on May 5, 1903, in Portland, Oregon, to Elizabeth and John Beard. His mother, an independent English woman passionate about food, ran a boarding house. His father worked at Portland’s Customs House. The family spent summers at the beach at Gearhart, Oregon, fishing, gathering shellfish and wild berries, and cooking meals with whatever was caught. He studied briefly at Reed College in Portland in 1923, but was expelled. Reed claimed it was due to poor scholastic performance, but Beard maintained it was due to his homosexuality. Beard then went on the road with a theatrical troupe. He lived abroad for several years study- ing voice and theater but returned to the United States for good in 1927. When I heard that Clarissa Dickson Wright of the BBC cooking show Two Fat Ladies passed away, I wanted to do something as a tribute to her and Jennifer Paterson, who passed in 1999. In one episode, “The Cambridge Eight,” Clarissa made a Rabbit Isabel. I used the idea to create a similar recipe. Although complicated, it makes a delicious and beautiful centerpiece for a special dinner. Ingredients: 1 whole duck, about 5 pounds (2.25kg) ¼ cup (1½ ounces/42g) wild rice 2 tablespoons oil for frying ½ medium (5 ounces/140g) onion, chopped ¼ pound (113g) pork sausage meat 5 to 8 fresh sage leaves, depending on size, chopped 4 to 5 fresh basil leaves, chopped 1 egg Salt and pepper 1 or 2 tablespoons bread crumbs or panko, if needed 8 pieces thinly sliced prosciutto, more if needed to patch holes ¼ to ½ (60 to 120ml) cup dry white wine 2 heaping teaspoons plum sauce (optional) Directions: Thaw the duck in the refrigerator for a day or two, if frozen. Start cooking the rice in a cup (237ml) of water. Bring to a boil, reduce the heat to low, and cover the pan. Simmer 30 minutes. The rice will be al dente, but I like the texture in the stuffing. When done, drain and set aside, covered. While the rice is cooking, remove the skin from the duck and fillet the meat from the legs. It doesn’t need to be done carefully because it will be ground (minced) later in a food process.

Serves 6 600g (1½lb) Split Peas 4 Thick slices of crusty bread (stale) 1 Cooked confit chicken leg 1 Large onion 1 Clove of garlic 250ml (1 cup) milk 2 Cloves 1 Star anis Sprinkle of saffron 1 bay leaf ½ teaspoon of cinnamon 1 Sprig thyme 1 Sprig rosemary Method 1. Soak the peas overnight in cold water 2. Chop and sweat the onion and garlic in a saucepan 3. Add the split peas 4. Pour over half the milk and top up with water to just cover the peas 5. Season with salt and pepper allow to cook slowly for three hours or until the peas are soft 6.

    B oE LLY F p or k with ANCHov Y and CHESTNUTS British Lop pork, used for this recipe, comes from an old breed of pig that has a good, even covering of fat, so that the belly is not excessively fat. With commercial pigs the belly is usually the only part with any fat at all. The use of anchovies with meat is a feature of the late eighteenth century and does not leave a fishy taste but adds depth to the dish. You will not need to add extra salt, as the anchovies will provide it. The chestnuts are a nice feature and provide a good texture. You can either buy pre-peeled sous vide nuts or keep your children occupied peeling chestnuts. In the latter case, cross the base of the nuts and put them into boiling water for a few minutes then run under a cold tap, drain and peel. Instead of deglazing the pan you can flambé a ladle of brandy and set fire to the contents, burning off any remaining fat. This also enhances the taste.
