BELL

SELECTION: Peppers • Bell peppers are available in a bright mix of colors ranging from green, red, yellow, white and purple and can be found fresh throughout the year in the produce department or pre-prepared and diced in the freezer section. • Inspect the fruit for any brown or soft spots. Bell peppers should be firm to the touch with a bright and shiny coloration. • Avoid Bell peppers that appear to have a wrinkled outer skin. STORAGE: • Rinse whole fresh Bell pepper with a fruit/vegetable sanitizer before slicing and dry well to remove moisture. • Store whole Bell peppers unwashed in the refrigerator veggie drawer where it is most humid. Remove any excess moisture to discourage ripening. • Sliced Bell pepper can be stored for later use and convenience in an airtight container with a paper towel to absorb moisture in the refrigerator for 3-5 days. You can also freeze Bell pepper in an air tight container after removing the seeds and slicing or dicing. NUTRITION/HEALTH/WELLNESS: • One medium-sized bell pepper contains only about 37 calories and provides more than the daily recommended nutritional requirements for vitamin A, C, and B6. • Bell peppers contain about 96 percent water and are a natural source of hydration during hot summer months. • In addition to high amounts of vitamin C, bell peppers are also rich in carotenoids which have been shown to contribute to healthy immune systems as well as eye health. Stuffed Peppers
