In Papua New Guinea (PNG), taro is consumed by the majority of people whose livelihood is mainly dependent on subsistence agriculture. It is the second most important root staple crop after sweet potato in terms of consumption, and is ranked fourth root crop after sweet potato, yam and cassava in terms of production. PNG is currently ranked fourth highest taro producing nation in the world. This success story illustrates as to how National Agricultural Research Institute (NARI) of PNG in collaboration with national, regional and international partners implemented a south Pacific regional project on taro conservation and utilization (TaroGen), and how the threat of taro leaf blight disease was successfully addressed by properly utilizing national capacity. So far, four high yielding leaf blight resistant taro varieties have been released to the farmers, which are widely adopted now.

Understand and Demonstrate: 1. The different mixing methods of breads and rolls, cakes and cookies, short dough’s. 2. Rolled-in doughs (Danish, Puff Pastry, Croissant, ect.) 3. Custard cookery (Creme Brulee, Pastry Cream, ect.) 4. Pate a choux (Cream puffs, Eclairs) 5. Basic cake decorating techniques Each student will rotate during the term to each of the following stations: 1. Bread 2. Laminated Pastry Doughs 3. Cakes 4. Short dough/Gluten Free Dietary Needs 5. Custards 6. Rounds The amount of total time in each station will vary by the number of weeks per term. On average, 1 to 1 ½ weeks per station each term. Students must execute the daily production in an efficient manner making sure to have bread and desserts ready for lunch service, 11:00 a.m. Santiam Restaurant; and 10:30 to Cafeteria. Students are responsible for cleaning the Bakery on a daily basis. They are also responsible for minimizing waste by finding uses for leftovers and products found in the walk-in and reach-in. BAKERY CLEAN-UP Will be expected to go through daily cleaning requirements to ensure quality of our establishment and sanitary conditions of the bakery. ROUNDS STATION The student in this station will be required to perform the following duties: 1. Inventory products, ingredients and already prepared desserts available for that day’s service. 2. Think of all the parts of the coconut and how these things could be used (i.e., husk, meat, shell, milk). Information The Samoan Diet and the Coconut Samoans eat a variety of food, including tropical crops, root vegetables, fresh fruit, chicken, pork, and seafood. However, the coconut is the most common food product in the Samoan diet. The niu is a young coconut that is not fully ripened. Every part of a coconut can be used in food preparation.

    HOME HOURS & DIRECTIONS GARDEN SLIDESHOW GARDEN NEWS & BLOG Polynesian Canoe Plants, Including Breadfruit, Taro, and Coconut: the Ultimate in Sustainability Planning Posted on June 27, 2019 by Leslie Lang Do you know about “canoe plants?” These are the plants—such as kalo (taro), ‘ulu (breadfruit), and niu (coconut), among others—that Polynesians brought in their carefully-stocked voyaging canoes perhaps 1,600 years ago when they first settled in Hawai‘i. Canoe plants are one more piece of the evidence showing us that the people who colonized Hawai‘i were intelligent voyagers who came in planned expeditions, not islanders who drifted here unintentionally. Not only did they successfully navigate the oceans like highways, but before they left home to explore and settle new lands, they pr​​epared themselves well. After all, they had to sustain themselves both during their long journeys and also upon arrival in a new island group, where they didn’t know what resources they would find. They maximized their limited space by packing seeds, roots, shoots, and cuttings of their most critical plants, the ones they relied on the most for food, medicine, and for making containers, fabric, cordage, and more. We can identify about 24 plants that arrived in Hawai‘i as canoe plants. You can see samples of some of them at Hawaii Tropical Botanical Garden. The Most Significant Polynesian Canoe Plants: ‘Ulu ‘Ulu (Artocarpus altilis, Artocarpus incisus or Artocarpus communis) belongs to the Moracceae (fig or mulberry) family. Known in English as breadfruit, the ‘ulu tree produces a “fruit” that is actually a vegetable with a high carbohydrate content.

All quinoa-based formulations positively affected the crust colour, endowing it with lower ‘lightness’ and higher ‘redness’ values, giving the biscuits a more appealing crust colour. Biscuits with higher percentages of QF also had better structure, as they were softer. The substitution of RF with QF significantly improved the nutritional profile of the biscuits, as a result of the increase in protein, lipid, ash, total soluble (SP) and insoluble polyphenol (IP), flavonoid, and antioxidant activity levels, which increased linearly with the substitution rate. Quinoa supplementation led to an increase in volatile compounds that were nearly always characterised by positive olfactory attributes. Sensory analysis revealed that the maximal substitution rate of QF able to maintain an adequate consumer acceptability rating is probably 50%, as higher percentages impaired acceptability due to the presence of herbaceous and bitter tastes, even if the consumers also rated these samples as healthier and softer to touch.

    Banana Custard Tart British puddings and custard are synonymous with each other. The go hand in hand; treacle tart and custard, apple pie and custard. Even the French who recon they've invented everything ever cooked, every dish in the food chain, every recipe, begrudgingly acknowledge that custard is British - why can't they call it that though? Crème Anglaise! There is custard and a custard, the latter we take to be baked - like baked egg custard, cabinet pudding, diplomat pudding, crème caramel, bread and butter pudding, lemon curd tart and this week's banana custard tart recipe. One of my favourite desserts being banana custard. The simple perfection of custard made to the exact velocity so as to suspend perfectly, the sliced banana. Cut the banana too thin and it disintegrates, too thick and it sinks to the bottom. At home I'm not adverse to using Birds custard powder - although I'd be chucked out the chef's magic circle if I used it on the dessert menu at work. Doctor Bird invented the powder because his wife was allergic to eggs. Incidentally, Chinese restaurants use custard powder and sugar to dip meat in before deep frying for things like deep fried chilli beef. The corn flour element to custard powder gives the meat a chewy crisp coating. Serves 6 Ingredients For the pastry 1 egg 1 egg yolk 75g icing sugar 115g softened butter 300g plain flour For the banana mix 50g butter 4 or 5 bananas, diced 25ml dark rum 25g brown sugar For the custard 4 egg yolks 50g caster sugar 550ml whipping cream For the caramel sauce 115g caster sugar 50ml water 115ml double cream Method To make the pastry, mix the egg, egg yolk and icing sugar together.
