    Hot Water Crust Pastry Hot water crust pastry is the most forgiving type of pastry. It doesn’t judge you by your experience and even when you fail, it allows you to start again and make it better – that is, if you keep it warm. When it cools, it doesn’t stretch and it will break, and become more demanding. Hot water crust is sturdier and therefore may be a little less elegant than shortcrust or puff pastry, but as a result it can also handle wetter and heavier fillings without fear of sinking, leakage or dreaded soggy bottoms. The pastry holds up and sculpts very well and is therefore ideal for hand-raising pies, moulding the pastry around a pie dolly or pie block, and for free-standing pies, where the pie mould or tin is lined with pastry and then removed before the last stretch of baking. It should certainly not be kneaded too much – just enough to make sure that everything is blended well. Overworked hot water crust pastry turns into a tougher, chewier crust, but this doesn’t mean the result will be inedible, just that it could be better. Because the fat for the hot water crust is melted, it is much better distributed throughout the dough, which creates a consistent pastry that will colour much more evenly while it bakes. Other pastry methods require you to rub the fat into the flour with your fingers, which can lead to inconsistencies in the colour of the baked result. Except for pork pies and Scotch pies, the dough should not be rested before use as it tends to toughen up, dry out and crumble when cooled.

    BREAKFAST TOAST, 6 WAYS I’ve always eaten toast—who hasn’t?—and I’ve always put sweet and savory stuff on it. So I’m glad to see this “trend” now qualifies as true breakfast. It’s convenient and obviously much better for you than even the best store-bought sweets. Especially when you use whole grain bread, which I advocate. A toaster is easiest and best when your additions are fine unheated, like yogurt and mashed avocado. But if you want to warm the topping, you’ve got to fire up the broiler or toaster oven: For the best texture, toast the bread on one side, turn it over, add whatever you like (not a ton, just a smear and maybe some fruit) then put it back under the heat to brown. Here are a few ideas, some simple and some more involved. Cinnamon Toast After turning, smear liberally with butter and sprinkle with equal parts cinnamon and sugar. Return to the broiler until browned. Honey-Chile Toast Same as above, only the topping is equal parts butter and honey, spiked with salt and Aleppo or other ground mild chile. Elvis Toast After turning, spread with peanut or other nut butter and top with thin banana slices. Return to the broiler to brown. Fresh Cheese Toast Brown one or both sides and spread with ricotta, cottage cheese, or goat cheese and top with chopped fresh or dried fruit. Return to the broiler, or not. Welsh Rarebit Mix Mornay (Cheese) Sauce (that’s béchamel sauce with grated cheese stirred in) with a dash of Worcestershire sauce and dry mustard.

Fish and chips is originally from the United Kingdom, but also very popular in Australia, Canada, Ireland, New Zealand, South Africa and some coastal towns of the Netherlands and Norway; and also increasingly so in the United States and elsewhere. For decades it was the dominant (if not the only) take-away food in the United Kingdom. The fried potatoes are called chips in British and international usage; and while American English calls them French fries, the combination is still called "fish and chips". (Potato chips, an American innovation, are a different potato-derived food, and are known as crisps in the United Kingdom.) Fish and chips have separately been eaten for many years – though the potato was not introduced to Europe until the 17th century. The originally Sephardi dish pescado frito, or deep-fried fish, came to Netherlands and England with the Spanish and Portuguese Jews in the 17th and 18th centuries. The dish became popular in more widespread circles in London and the south- east in the middle of the 19th century (Charles Dickens mentions a "fried fish warehouse" in Oliver Twist) whilst in the north of England a trade in deep-fried "chipped" potatoes developed. It is unclear when and where these two trades were merged to become the fish and chip shop industry we know today. The first combined fish and chip shop was probably the one opened in London by Joseph Malin in 1860.

    Dam Event Room As you may or may not know, we are actually boat people. We have been running the passenger boat in De Pere since 2015 and the one in Appleton since 2018. We love bringing people to the water!! That is the reason we started the Bistro, to be able to do just that, all year around.
