Central Restaurante is the flagship restaurant of Peruvian chef Virgilio Martinez Velit and serves as its workshop for investigating and integrating local Peruvian ingredients into the restaurant's menu. The restaurant is known for its modern interpretation and presentation of Peruvian cuisine. Guo Latinoamerica calls the Central Restaurant the heart of his gastronomic philosophy Virgilio Martinez Velit. In 2012, Central Restaurante was named the best restaurant in Peru by peruvian restaurant guide SUMMUM. In 2013, Central Restaurante ranked 50th in the ranking of the 50 best restaurants in the world according to the British magazine Restaurant., and in 2014 jumped 35 places, receiving the recognition of Highest Climber and ranked 15th in the world. On August 21, 2014, Central Restaurante was awarded the Best Restaurant of Peru award from Peru, SUMMUM for the third year in a row, and also received awards for Best Contemporary Peruvian Cuisine and Best Sommelier. Central was named the best restaurant in Latin America for 3 consecutive years (2014, 2015 and 2016) and ranked 2nd in 2017. It is also ranked among the top 50 restaurants in the world, ranking 4th in the world in 2015 and 2016, 5th in 2017 and 6th in 2018. The Kitchen Kitchen at Central Restaurante is a modern Peruvian, and Virgilio founder Martinez Velich has tried to redefine Peruvian cuisine by introducing little-known indigenous ingredients from the coastal region of Peru, andres of the Highlands, and the Amazon rainforest. Examples of such ingredients are kushuru (kushuro), edible cyanobacteria collected in high-altitude wetlands; arracacha, root vegetable from Andes; and arapayma, a freshwater fish found in the Amazon River. The restaurant's chef and commentator Geeta Bansal describes the kitchen as fresh and modern with beautiful plates. Virgilio's owner and founder, Martinez Velis, previously worked in restaurants such as Luteche, New York; Kahn Fabes (Sant Cheloni); and served as a chef at Astrid and Gasson in Bogota and Madrid. The chef of the kitchen is Pia Leon, wife The Majests. They worked together for two years before getting married in Lima on May 4, 2013. The wine director of the restaurant is U.S.-born Gregory Thomas Smith. Legal status since its opening, the Central Restaurant has been illegally located in the residential area. In 2009, Manuel Macias Oyanguren, the mayor of Miraforesa, closed the restaurant and announced that it would not reopen, providing zoning approved since 2006. The restaurant continued to operate until 2010, when it finally closed. Later that year, Central reopened thanks to a court order. He is considered one of a new generation of Peruvian chefs promoting the spread of Peruvian cuisine. It is known for using modern cooking techniques for indigenous Peruvian ingredients. Marie Claire magazine named him the new star of gastro Sky Lima. On April 29, 2013, its flagship restaurant Central ranked 50th in the ranking of the 50 best restaurants in the world according to the rating of the British magazine Restaurant. In 2014, Central jumped 35 places to become the 15th, winning the Highest Climber award, and later that year was named the best restaurant in Latin America. Martinez's career was studied and certified at Le Cordon Bleu in Ottawa and London. In his formative years, he worked in well-known restaurants such as Luteche (New York); Kahn Fabes (Sant Cheloni); and served as a chef at Astrid Gasson in Bogota and Madrid. Martinez is known for using unique ingredients such as potatoes grown at an altitude of 5,000 meters above sea level; Kushuru (Kushuro), edible cyanobacteria collected in high-rise wetlands; and wild varieties of kiwi and quinoa. He is a fan of the use of salt, and cooks with more than 120 varieties at his restaurant in Lima. In 2013, Martinez helped form Mater Iniciativa, an interdisciplinary group of professionals who travel to Peru in search of unique ingredients that Martinez, in turn, incorporates into his cooking. In March 2018, he opened a laboratory in the asnes center and works with local families to catalogue different cultures. Martinez's current designs are currently the chef and owner of Central Restaurante, his flagship restaurant located in the Barranco area of Lima, Peru. In June 2012, he opened the Senzo project with Orient-Express Hotels, located at the Palacio Nazarenas Hotel in Kutsko. In July 2012, he opened Lima, a modern Peruvian-style restaurant located in the London borough of Fitzrovia. He was awarded a Michelin star in the 2014 Michelin Guide. In July 2014, a second Lima restaurant, called Lima Floral, opened in London's Covent Garden. On March 5, 2017, a third Lima restaurant was opened in Dubai at Citywalk Phase 2. On May 9, 2019, various sources reported that Martinez was stopped at Los Angeles airport for trying to enter the U.S. with 40 piranhas in vacuum plastic bags in his personal luggage. After being questioned by airport staff about what he was bringing into the country, Martinez allegedly replied that he had meat and bones and that he had been detained and taken to an interrogation room at the airport.
