Virgilio Martínez Véliz nace el 31 de agosto de 1977 en Lima, capital del Perú Virgilio Martínez Véliz was born 31 August 1977 in Lima, capital of Peru “Virgilio opta por aproximarse a la gran diversidad de nuestros ingredientes de un modo similar al que utilizaron los pueblos del Ande en tiempos pre-hispánicos: a través del control vertical de pisos ecológicos. Según esta forma alternativa de entender la geografía, se percibe el terreno no como un plano horizontal sino más bien verticalmente, de tal manera que se saca provecho de todo aquello que la flora y la fauna son capaces de ofrecer según las particularidades de cada sistema ecológico. A consecuencia de las dramáticas fluctuaciones del terreno en la región andina, en un relativamente pequeño radio de 100 kilómetros (recorridos a pie sin mayor dificultad por muchos campesinos), se puede acceder directamente a productos procedentes de altitudes variadas que comprenden desde la costa hasta la Amazonía del país. Motivado por una curiosidad inagotable y por su interés en transmitir la complejidad de su tierra, a Virgilio le apasiona viajar e investigar ingredientes aún indocumentados que puedan aportar todavía mayor riqueza a la cocina local. Para ello, recorre distintos espacios: marino, bajoandino, extrema altura en cordillera, y selvas alta y baja. Además, cuenta con un equipo interdisciplinario que complementa a cada nuevo “descubrimiento” con un necesario contexto que busca trascender lo estrictamente culinario e incursionar en aspectos nutricionales, biológicos, antropológicos.” “Virgilio chooses to approach the diversity of our ingredients in a manner similar to that used by the peoples of the Andes in pre-Hispanic times: through vertical ecological monitoring. According to this alternative way of understanding the geography, land is perceived not as a horizontal plane but rather vertically, so that it takes advantage of all that the flora and fauna are able to deliver according to the particularities of each ecological system. As a result of the dramatic fluctuations in the Andean terrain in a relatively small radius of 100 kilometers (for many farmers this is not a difficult hike), there is direct access to the country’s products from various altitudes ranging from the coast to the Amazon. Motivated by an insatiable curiosity and interest in conveying the complexity of their land, Virgilio is passionate about traveling and investigating ingredients that can bring undocumented and yet even more wealth to the local cuisine. To do so, through a number of areas: ocean, lower Andes, extreme altitude, and high and low jungles.
