Conducted by The Beef Carcase Competition provides breeders with the opportunity to benchmark their stock and celebrate excellence in beef carcase breeding, with more than 600 cattle shown over 11 days of Show. The Royal Melbourne Show Beef Carcase Competition has a specific emphasis on delivering an exceptional exhibitor experience, with the highest calibre of judges, exhibitor facilities and results technology. JUDGES

Kate Spry – School & College Paraders’ Competition

The judge of the School & College Paraders’ Section of the Beef Carcase Competition at the 2015 Royal Melbourne Show is Kate Spry. Kate and husband Matt own and operate Spry’s Shorthorns in Tamworth (Northern NSW). Spry’s Shorthorns are a MLA Target 100 Producer.

Over the last five years the Spry’s have also introduced Angus and White Dorper cattle to their enterprise.

Kate was a finalist in both the State Paraders’ Competition RAS 1994-1995 and the Junior Judging RAS Competition Sydney between 1993 and 1996. She has participated as a finalist at various Royal Show Paraders’ Competitions and National Heifer Shows until the age of 23. Kate has also judged various Parader Competitions at local and regional level and Youth Shows.

Kate has exhibited at various Royal and National Shows and Sales with both cattle and sheep and grew up in the Shorthorn Youth program, being publicity officer in 1999 to 2000. From 2005 to 2007 Kate was a Vice President of the Beef Improvement Association and has been on various show and sale committees.

We welcome Kate to the Beef Carcase Competition at the 2015 Royal Melbourne Show.

Matt Spry – Led Steer & Heifer Beef Carcase Competition

Matt owns and operates Spry’s Shorthorns with wife Kate in Tamworth (Northern NSW).

Matt has judged at many Royal Shows, and National Show and Sales across Australia, including the 2013 New England Angus Breeders’ Bull Show and Sale, Tamworth 2011 Dungong Steer Spectacular and Carcase Competition, 2007 Dubbo Show – All Breeds and Steers, ; 2006 Royal Melbourne Show – Angus Feature Show, 2005 Quirindi Prime Stock Show, 2003 Hereford National Show and Sale Wodonga, 2002 Royal Adelaide Show – Shorthorns, 2002 Sydney Royal Show – Various Breeds, 2000 Parkes Show – All Breeds, Brisbane Royal Show – Shorthorns, Bathurst Royal Show – All Breeds; 1995 Devonport Royal Show, Canberra Royal Show – Limousin Feature Show. Matt was the 1993 State and National Winner Australian Champion Junior Judge (under 25).

Currently Matt also buys cattle for Woolworths.

Matt is passionate about the meat and livestock industry and is fortunate to have been born and raised in a successful seedstock operation which has always focussed on building solid relationships with clients and active involvement with various sectors of the beef industry. He appreciates all facets of livestock assessment and general husbandry and has had substantial involvement with a wide variety of industry stakeholders from beef industry leaders to buyers, feedlotters, processors and producers. Matt has assisted clients to liaise and network within the industry by offering support with marketing their progeny to feedlotters, re-stockers and processors.

1.4 - Fat Colour is recorded for your information at the end of the eating quality section but has no direct impact on eating quality; AUSTRALIAN BEEF excessive yellowing or softness may affect the saleability of the carcase. Fat colour is assessed on the internal seam fat at the CARCASE APPRAISAL quartered site using the AUS-MEAT chips and ranges from 0 (bright white) to 9 (very yellow). SYSTEM (ABCAS) There are no points allocated for fat colour but individual competitions may apply penalty points (max. 5) if a carcase exceeds Fat colour 3 or if a market specification for fat colour is set.

MSA INDEX INFORMATION

The carcase feedback provides a great deal of carcase information, including the new MSA Index.

What is the MSA index? The MSA index is a single number and standard national measure of the predicted eating quality and potential merit of a carcase.

The MSA index is a number between 30 and 80, expressed to 2 decimal places (ie. 54.62), to represent the eating quality potential of a whole carcase. The MSA index is independent of any processing inputs and is calculated using only attributes influenced by pre- slaughter production. It is a consistent benchmark which can be used across all processors, geographic regions and over time. It reflects the impact on eating quality of management, environmental and genetic differences between cattle at the point of slaughter.

How is the MSA index calculated? The MSA model predicts the eating quality of 39 cuts in a carcase using the measurements collected by accredited MSA graders.

MSA eating quality scores are the combination of tenderness, juiciness, flavour and overall liking of beef. The MSA index is a weighted average of these scores for the 29 MSA cuts for the most common corresponding cooking method. It is not a yield measurement.

The MSA index is a tool to be used by producers and lot feeders. Inputs in the MSA model controlled by the processor, for example hang method, days aged, ultimate pH (within the acceptable range up to 5.71) and loin temperature are set as default values. The MSA index is calculated for Achilles hung carcases with 5 days ageing.

A carcase with a higher MSA index will have higher beef eating quality scores for many cuts compared to a lower MSA index carcase. The changes in eating quality of individual muscles will depend upon the different combinations of carcase inputs affecting cuts in different ways. This is why the MSA index is a measure of the average eating quality of the whole carcase.

Why is the MSA index useful? Producers are able to access MSA feedback for individual carcase weight, rib fat, MSA marble score, ossification score, HGP status, hump height and sex. However it is difficult to assess the importance of these individual traits on eating quality and how changes in breeding and genetics or management decisions impact on the eating quality of the carcase. The MSA index combines the impact of all these inputs and allows producers to evaluate changes in their business, to drive a faster rate of gain in eating quality.

With the goal to improve eating quality for the consumer, the producer and lot feeders are faced with how to economically improve eating quality and the MSA index through genetics and management interventions.

Why do the highest MSA Index numbers not win the competition? The MSA Index is a predictor of eating quality, but does not include market specifications or saleable meat yield considerations that are important components of a carcase competition.
