The event will be held in accordance with current EA Show Horse rules. Enter on show day in centre of arena. Entries open strictly at 8.00 a.m. Entry: $13.00 per horse and rider/handler combination, this gives unlimited entry into all classes in all rings and includes the $3.00 compulsory swabbing fee. A wristband with number will be given to each horse and rider/handler combination. Results will be recorded according to the numbers as allocated, so it is in each competitors’ best interests to ensure that the correct number is shown to the steward at the time of competition. Prizes: Ribbons to third, unless otherwise stated. All protests (or any protests) must be made in writing to the ring master.

COMPETITORS PLEASE NOTE: When you have won two qualifying events in one ring you are requested NOT to compete in any more qualifying classes in that ring, for that horse. There have been extra classes added in each championship section to allow more competitors to gain their appropriate qualifications. You are welcome to compete in both rings but once you win a championship then that exhibit MUST retire. REMEMBER: We love this sport and Nhill A & P Society Inc. ask that you respect the Officials, Judges and your fellow competitors. Medication control of horses may take place in accordance with the Equestrian Australian Equine. Anti-Doping and Controlled Medication Regulations (1st edition effective 5 April 2010 and updates) and the Equestrian Australia Medication Control System and Swabbing Policy (1 January 2015). Random Swabbing and horse registration checks may take place at any time. A $3.00 swabbing fee per horse is to be paid by all entrants. Fees to be held by WASA in a special fund for the continuation of Random Annual Swabbing at all Shows.

WASA COMPETITION REGULATIONS • An article having won at a local show will compete at a Wimmera Group final in November • An article having won at Show level, is not eligible for entry at any other show until after the Group judging, when if not the winning entry, can compete again. • Each article entered must be the bona fide work of the exhibitor If for any reason a winner is unable to compete at Group Final, then 2nd place getter is eligible to compete • W.A.S.A. entrants must reside in the boundaries of the Wimmera Group • Winners at W.A.S.A. 30 V.A.S.L. COOKERY COMPETITION Proudly Sponsored by Ward McKenzie Pty Ltd VAS Rich Fruit Cake. Open to fruit cake enthusiasts. VAS Boiled Fruit Cake. A competition for junior cake bakers under 18 on the day of their local show. Summary: If you mention country shows to anyone all over Australia the conversation will inevitably turn to fruit cakes, who has the best recipe, how big the cake should be, how long to soak the dried fruit, whether to use sherry or brandy, (or better, both) and which tin to use, how much shrinkage is allowable in the cooked cake, the list goes on. In fact, baking fruit cakes is more than a time- honoured tradition; fruit cake is the number one VAS competition as far as sheer numbers of exhibits go. That’s a whole lot of cake. Rules and Regulations 1. The fruit cake competitions follow the show-group-state level of competition. 2. An exhibitor having won at a Show, will bake another cake for entry in the Group Final; the winner will then be required to bake a further cake for the State Final. 3. Exhibitors are to follow the recipe and specifications (listed below) State Final Prizes First - $200 plus trophy, Second - $100, Third - $50 HOT TIPS FOR EXHIBITORS A well kept competition cake making secret: lay a tea towel over cake rack before turning the cake out to prevent the imprint of the cake rack appearing on your competition cake.

1. VAS Rich Fruit Cake (Refer page 42) Ingredients: 250g (8oz) sultanas, 250g (8oz) chopped raisins, 250g (8oz) currants, 125g (4oz) chopped mixed peel, 90g (3oz) chopped red glace cherries,90g (3oz) chopped blanched almonds, 1/3 cup sherry or brandy, 250g (8oz) plain flour, 60g (2oz) self-raising flour. ¼ teaspoon grated nutmeg, 1/2 teaspoon ground ginger, ½ teaspoon ground cloves, 250g (8oz) butter, 250g (8oz) soft brown sugar, ½ teaspoon lemon essence OR finely grated lemon rind, ½ teaspoon almond essence, ½ teaspoon vanilla essence, 4 large eggs. Method: Mix together all the fruits and nuts and sprinkle with the sherry or brandy. Cover and leave for at least one hour, but preferably over night. Sift together the flours and spices, cream together butter and sugar with the essences. Add eggs one at a time, beating well after each addition, and then alternatively add the fruit and flour mixtures. Mix thoroughly. The mixture should be stiff enough to support a wooden spoon. Place the mixture into a prepared tin 20cm square, straight sided, square cornered tin and bake in a slow oven for approximately 3½ - 4 hours. Allow the cake to cool in the tin. Hot Tip: To ensure uniformity and depending upon the size it is suggested the raisins be snipped into 2 or 3 pieces, cherries 4–6 into 4 or 6 pieces and almonds crosswise into 3 or 4 pieces WASA group level 1st prize $20, Local Show 1st Prize $ 15, 2nd prize $7.00

VAS Junior Boiled Fruit Cake (Refer page 40) Ingredients: 375g (12oz) mixed fruit, ¾ cup brown sugar, 1 teaspoon mixed spice, ½ cup water, 125g (4oz) butter, ½ teaspoon bicarbonate of soda, ½ cup sherry, 2 eggs lightly beaten, 2 tablespoons marmalade, 1 cup self-raising flour, 1 cup plain flour, ¼ teaspoon salt. METHOD: Place the mixed fruit, sugar, spice, water and butter in a large saucepan and bring to the boil. Simmer gently for 3 minutes, then remove from stove, add bicarbonate soda and allow to cool. Add the sherry, eggs and marmalade, mixing well. Fold in the sifted dry ingredients then place in a greased and lined 20cm (8”) round cake tin. Bake in a moderately, slow oven for 1.5 hours, or until cooked, when tested. WASA group level $20, Local Show 1st Prize $15, 2nd prize $7.00

VAS Carrot Cake (Refer page 42) Ingredients: 375g plain flour, 2 tsp baking powder, 1 ½ tsp bicarb soda, 2 tsp ground cinnamon, ½ tsp ground nutmeg, ½ tsp allspice, 2 tsp salt, 345 g castor sugar, 375 ml vegetable oil, 4 eggs, 3 medium carrots, grated (350 grams), 220g tin crushed pineapple, drained, 180 g pecans nuts crushed Steps: 1. Preheat the oven to 180°C (160°C fan), Grease a 23cm (9”) round cake tin and line with baking paper. 2. Sift the dry ingredients together into a bowl. In a separate bowl, beat the eggs and oil, then add to the dry ingredients. Mix well then add the carrots, crushed pineapple and pecans. Mix to form a smooth batter and pour into the cake tin. 3. Bake for approximately 90-100 minutes. 4. Remove from the oven and allow to cool for 10 minutes in the tin on a wire rack. Upend and allow to cool on the wire rack. VAS Carrot and Cake Muffins (Refer page 40) A competition for junior cake bakers under 18 on the day of their local show State Final Prizes First - $250 plus Trophy, Second - $100, Third - $50 Ingredients: 2½ cups self-raising flour, 1 teaspoon ground cinnamon, ¼ teaspoon ground nutmeg, 1 cup brown sugar (firmly packed), 1/3 cup chopped pitted dates, 1 cup coarsely grated carrot, 1 tablespoon orange marmalade, 1 cup canola oil, 2 eggs lightly beaten, ¾ cup orange juice, 1 cup reduced fat milk, Method: 1. Pre-Heat oven to 190°C (moderately hot) 2. Line a 12 hole muffin pan with Round Paper Muffin CasesClassic White Muffin Cases Size (35mm Height x 90mm wide x 50mm base) 3. Sift dry ingredients into a large bowl; stir in dates, carrots. Then add the combined marmalade, oil, eggs, juice and milk. Mix until just combined. 4. Spoon mixture evenly into muffin paper cases in muffin pan. 5. Cook for 20 minutes. To test if muffins are cooked insert cake skewer; if it comes out clean the muffins are ready. 6. VAS CRAFT & PHOTOGRAPHY COMPETITIONS The craft and Photography competitions are grouped together because they follow the same tri-level path, that is; the winning exhibit at a local show/field day is entered into the local group final and then the exhibit that wins at the group final is sent to the State Final. Traditionally the State Final is held at the Royal Melbourne Show. RULES AND REGULATIONS 1. Each exhibit entered must be the bona fide work of the exhibitor 2. Professional Photographers ARE NOT ELIGABLE TO ENTER. (Someone that derives the greater percentage of their income as a photographer) 3. An exhibit having won at a show will compete at a Group Final. The winning exhibit will then compete in the State Final. 4. An exhibitor may represent only one local show at Group level and one Group State level. 5. An exhibit having won at State Final is no longer eligible to compete in the competition. 6. If for any reason a winner is unable to compete at Group or State Final level then the second placegetter is eligible to compete 7. A person will not be permitted to win at more than one Show within the State in any one year. Persons not adhering to this rule will be required to forfeit/refund prize money. 8. Sweet Chutney Sweet Chutney Recipe Ingredients: 1/4 cup extra virgin olive oil, 1 kg red onions, halved, thinly sliced,1/2 cup brown sugar,1/3 cup caster sugar, 1/2 cup balsamic vinegar, 4 sprigs thyme, leaves picked, 1 bay leaf, 1/2 teaspoon ground cloves, 450gm tin baby beets, sea–salt flakes and freshly ground black pepper, to season. Method: Heat oil in a large heavy based saucepan over a medium heat. Add onion & cook, stirring, for 20 mins or until just softened. Stir in sugars, vinegar, thyme, bay leaf & ground cloves. Bring to the boil, stirring occasionally, until sugar has dissolved. Reduce heat to low & simmer, stirring, for 20 mins until chutney is thick. Drain baby beets, reserving 1/2 cup of the liquid. Finely chop beets & add, along with the reserved liquid, to pan. Cook, stirring for 5 mins until rich in colour. Season to taste. Ladle into sterilised jars & seal tightly. JAM & JELLIES 30. Classic Strawberry Jam Strawberry Jam Recipe Ingredients: 1 kg strawberries rinsed & hulled, 2 x 500 gm packs CSR jam setting sugar, 10 gm butter. Method: Crush strawberries coarsely using potato masher or blender. Place strawberries and sugar into a large, heavy based, 6 litre saucepan. Heat mixture over a low heat until sugar is dissolved. Do not allow to boil. Add butter then increase heat & bring to a full boil (a boil that cannot be stirred down). Boil for 4 minutes only. 48 RULES & REGULATIONS

1. All exhibits must be bona fide property of the exhibitor or recognised firm, and a statutory declaration of same respecting age and eligibility must be made if required. 2. Entry must be lodged at the Secretary’s Office at Box 80, 139 Macpherson St, Nhill, 3418 on or before 5.00 pm on Friday, prior to the show. A ticket will be given stating the class, section and number of the exhibit of which entry is made. (2a). The Committee has the right of refusing or cancelling an entry giving reasons for doing so. (2b). All persons exhibiting shall accept the decision of the judge or judges appointed by the Society, and in case of a written protest, the decision of the Committee shall be accepted as final. (2c). The Committee may withhold any prize where an exhibitor and his stock shall be disqualified and debarred from exhibiting at the Society’s Show during the pleasure of the Committee. A disqualified exhibitor, if also a member shall be liable to expulsion from the Society. (2d). All entries must be made subject to the rules and regulations of the Society and they are accepted only on that distinct understanding. 3. In different classes, with the exception of sections as mentioned no exhibit shall be allowed to compete in more than one section in the same time. 4. No exhibitor shall be allowed in that portion of the ground which his exhibit is placed during the adjudication (unless allowed by the Stewards), and it shall be the duty of the Stewards to prevent any person interfering with the judges and if necessary, order the removal of such offender from the ground. And no person accepting those in charge of stock, implements and machinery and for whom an authority must be obtained will be permitted to remain on the ground during the adjudication under any pretence whatever. The persons in charge must not leave their respective lots or address the judge unless authorised by the Stewards of the exhibition. 5. The owner or exhibitor of any exhibit disapproved of as an exhibit by the committee of the Society must immediately, upon notice to that effect, remove such exhibit from the Society’s grounds. 6a. The judge or judges may award a second or third prize instead of a first one, or may withhold a prize altogether where there is no competition or where the exhibits are not of sufficient merit. 6b. Where the judges award equal first, first & second prize money will be equally awarded. 7. No prize can be awarded by the judge or judges for extra exhibits if the prize list contains a class or section in which the same can compete. 8. Should any exhibit having gained a prize be disqualified, the next on the list does not necessarily obtain the same prize. The Committee with or without the advice of the judge or judges decide the question. 9. No exhibit without the permission of the secretary can be removed from the exhibition until 6.30pm on the day of the show, when all exhibits can leave. 10. The Disputes Committee consisting of Society’s President, Vice Presidents and Head Steward of relevant classes. Protests against awards must be accompanied with a deposit of $50.00 which will be forfeited if protest is considered frivolous. 11. The privilege of distributing trade lists, advertisements and other documents is restricted exclusively to exhibitors at their respective stands. Any infringement of this regulation will incur expulsion from the ground. 12. Every possible care will be taken of all exhibits, but no responsibility will be incurred by the Society. 13. All exhibitors of stock will be required to provide their own forage, and the exhibitors of machinery, all the fuel and material necessary; to enable them to comply with the above. 14. Proof of age of exhibit of stock must be available if requested by Steward. 15. The breeding year dates from 1st of August for horses. Exhibitors of sheep to state the month when the exhibits were lambed if requested. 16. No implements or machinery can be removed from their section during the exhibition. 17. All exhibits must be in their places on the ground at the appointed times. 18. The exhibition will be open to the public on the day of the Show at 9.30am. 19. The Committee reserves the right to postpone or alter date of Show should same become necessary and committee incurs no responsibility of liability for reason of such postponement. 20. The Society is prepared to give liberal encouragement to all kinds of novelties calculated to improve new and existing industries and may award prizes to such extra exhibits if deemed worthy. 21. Intending competitors are particularly requested to observe the date fixed for the inception of entries at the office, as the rules will be strictly adhered to; and also, that the entry tickets must be produced, attached to each lot at the gates of the Show Ground, and not removed until authorised by the Secretary. All dairy products for exhibition must be made in the Wimmera district. 22. In the event of any exhibitor openly questioning and/or criticising the decision of the judge and or judges or to the Committee or to the exhibitors, the committee shall have the power to withdraw all or any such offender in any section and any prize money won by such offender may be forfeited. 23. Any prize or prizes awarded by the Society and not claimed within 14 days of the show will be forfeited.
