Our mission, from the very beginning, has been to manufacture pure, exquisite chocolate using natural ingredients. We also focus on extracting the best natural flavour of the bean.

1 OUR STORY The craft of making chocolate

The seed for Cocoacraft, the idea, was sown as early as 1977. At a time when chocolate was considered a treat reserved for the wealthy, Cdr Kuruvilla was intrigued by the unpicked and broken cocoa pods lying discarded in his father-in-law's estate. This is when his interest in the world of chocolate was first piqued. He learned that a hike in international cocoa prices in the early 1970s had led many Kerala planters to replace their existing crop with cocoa beans, but there was an almost immediate crash due to large global production. This led to severe losses and many Kerala planters discarded their crop.

At this time the chocolate industry was non-existent in Kerala. All cocoa beans were exported out of the state and Cdr Kuruvilla realized the need for expertise in this industry in the state. Thus began his journey of discovery which led him to pioneer the couverture chocolate industry in India. After years of research, developing in-house machinery and work on developing the flavour of the chocolate, the brand Cocoacraft was launched in 2008. Our first product was Cocoacraft Brown - a gift box containing 12 coconut centered belgian pralines. Today our product line includes divine couverture chocolate, chocolate , cocoa powder, chocolate bars and confectionery and much more. 2 WHAT MAKES OUR CHOCOLATE SPECIAL?  Our cocoa is single origin as we work with specific growers in South India, thus ensuring that the quality of the bean is standardized.  Fermentation and drying are carried out in-house. Flavour pre-cursors are developed at this time, which eventually lead to the chocolate flavour as we know it.  Our chocolate is made by - a slow process by which the flavour is refined and the chocolate turns creamy and smooth. We do not use an alkali to speed up the conching process.  Our chocolate is pure couverture, with 37% in all variants and 33% cocoa butter in and variants.  Cocoacraft dark chocolate contains only 4 ingredients: cocoa beans, , soy lecithin and natural vanilla extract.

CHOCOLATE COUVERTURE

Cocoacraft chocolate is 100% pure and natural couverture, with 37% cocoa butter content in all dark variants and 33% cocoa butter content in milk and white chocolate. These premium chocolate slabs are made from well-fermented, single origin conched beans. They are available in two packing options, untempered blocks and tempered buttons.

HGH FAT COCOA POWDER This premium product contains 20-22% cocoa butter powder is dark reddish brown in colour and has a mild flavour. It is ideal for baking and desserts. Natural process cocoa powder is light brown in colour and has a stronger chocolate flavour. It is used in chocolate drinks, for baking and in desserts.
