The fascinating method involves making wine in terracotta clay or ceramic pots. Today, a small band of adventurous winemakers embrace this art, harnessing low-fi technology to ferment wine naturally on skins, often for many months. After maturation, they are generally bottled without fining or filtration to retain flavour and can appear lightly cloudy. The result is richly textured, expressive styles where the old world meets the new. The winery is located just 40 kilometres outside Adelaide, where vines have been planted since 1845 - Roman produces 19 single vineyard wines and they are all 100% varietal. The grapes are all hand- picked and pruned – wines are matured in Burgundian barriques and bottled without fining or filtration to capture the individual character of each vineyard. Roman set out to make world class wines…he has accomplished that goal. Tasting Notes Colour: Deep Crimson Nose: A harmonious combination of forest floor, polished wooden furniture, raisin cake mix with understated cassis and blackberry fruits, in what is a very low altitude, reserved expression. As the glass evolves with air the altitude of perfume slowly rises and a bouquet of cedar, roast almond, leather boot and a deep current of blackcurrant finely interlace with the aforementioned earthiness and create something quite unique and sophisticated. Palate: There is careful attention to detail across this finely polished and creamy smooth palate that evidently reflects the 40% Merlot inclusion. Layers of pure black fruit, earthy olive tapenade and subtle degrees of cigar tobacco, roast almond and baking spice nuance throughout this classical styled composition.
