    2020 ANNUAL REPORT Dear Washington State wine industry colleagues and friends, Fiscal Year 2020 (July 2019-June 2020) was on track to be one of our busiest years ever. From July through February, our team was laser-focused on executing programs and events all over the country that engaged high level trade and media in order to drive opportunity and growth for Washington wineries. In March 2020, COVID-19 put a halt to travel, yet our team has taken on the challenge to innovate and market Washington wine in new, creative ways. We’ve significantly enhanced our presence and activity on social media, and increased our digital marketing efforts tenfold. We worked collaboratively with our partners to plan and execute virtual media tours, online seminars, and even Zoom winemaker dinners. We created two different digital conversation series to engage our network of wine professionals both nationally and internationally. Constituent communications became an even higher priority, to keep our wineries and vineyards well informed about the many changes and adjustments coming from the Governor’s office. We launched a new brand logo and a new marketing campaign, Drink. For WA., to support Washington wineries as well as our neighbors and friends in the restaurant and hospitality industries. We are thoughtfully addressing the social justice movements, and our board formed a Diversity & Inclusion Task Force to help lead the industry in ongoing learning and dialogue. Our research program continues to soar, and the online seminar format allows more of our industry to engage and give input on the future of Washington wine.

Email us your favorites; maybe we’ll include them in the next edition. Acid Reduction - Reducing the acid in juice or wine to an acceptable level. It is usually measured as tartaric acid and requires a testing apparatus and reagents. Good levels are typically in a range of 0.6 to 0.8 percent acid, depending on the wine. More technically the reading is read as grams per liter. Therefore 0.6 percent would be 6.0 g/l. Acidulation or Acidification - Raising the acid level of juice, wine or sometimes water by adding some type of acid increasing additive or blending with a higher acid juice or wine. Acidified or Acidulated Water - Water to which acid (most commonly citric acid) has been added. It is a way to reduce sugar in a juice that is too high in sugar without diluting (thus reducing) the acid level of that juice. Additives - Things added to wine to enhance quality or possibly fix some type of flaw. There are many additives for many situations and it is wise to gain at least some basic knowledge in this area. Alcohol - Obviously one of the significant components of wine. Yeast turns sugar to alcohol. Rule of thumb says for each percentage of sugar in a non-fermented juice, the alcohol will be half. For example 21% sugar should ferment out to an alcohol level of about 11.5 to 12%.

After three years, Tom (born in Richland, WA) and Anne-Marie Hedges (born in Champagne, France), moved from a sourced fruit model to an Estate Grown model, by purchasing land in WA States’ most coveted terroir: The Red Mountain AVA. Soon after, Hedges Cellars became Hedges Family Estate, when their son Christophe joined in 2001. Shortly after, their daughter Sarah joined in 2006 and became head winemaker in 2015.     If you drink no Noir, you Pinot Noir Volume 9, Issue 39 March 31, 2014 Adventures on the Pinot Trail: World of Pinot Noir - The Seminars On February 27, 2014, I hit the Pinot Trail to attend four major events in California. Like the song, “Sugartime,” from the 1950s sung by the McGuire Sisters, it was “Sugar (Pinot) in the morning, Sugar (Pinot) in the evening, Sugar (Pinot) at suppertime. Be my little sugar, And love me (Pinot) all the time.” The trail first led me to Santa Barbara for the 14th Annual World of Pinot Noir, then to San Francisco for three more memorable events: a special retrospective tasting of the wines of Ted Lemon titled “30 Years of Winemaking, 20 years of Littorai,” at Jardiniere restaurant on March 2, Affairs of the Vine Pinot Noir Summit at The Golden Gate Club on March 9, and the In Pursuit of Balance seminars and tasting at Bluxome Street Winery on March 10. I will give a full report on each stop along the Pinot Trail in this issue and those to follow, highlighting some of the special wines I tasted. Some have accused me of being a Pinot pimp and rightfully so. One of my readers told me when I asked him what he had been drinking, “As far as what I am drinking, it’s Pinot you bastard, and it’s your damn fault. Now I empty my bank account at wineries nobody has ever heard of, on wines nobody has ever drank except you, you pr**k. You have ruined me....and I love it.” The World of Pinot Noir successfully relocated this year from its long-standing home in Shell Beach to the Bacara Resort & Spa in Santa Barbara.

    Vermouth Winemaking by Werner Roesener The Vermouth wines described here are classified as sweet aperitif wines and are similar to the commercial products of sweet Cinzano or Martini. They are served chilled at 7 to 10 degrees Celsius as appetite stimulant before meals. They contain 17 to 19 percent alcohol and 7 to 9 percent sugar. Their particular flavour is derived from herbs. As an overview, the production involves making a suitable fortified base wine and then infusing herbs into it. To make a fortified base wine, the amateur winemaker has several options: 1. Adding alcohol to an existing table wine of typically 12 percent alcohol content This requires mixing 16.8 L of wine with 3.2 L of 40% alcohol or Vodka and 1.6 kg sugar to make a 20L batch. White table wine worksbest. Red wine can also be used, but very tannic wine should be avoided, becauseit may take several years of ageing to become drinkable. 2. Making a wine from start specifically for this purpose from grape juice or concentrate: The starting gravity should be adjusted with sugar or concentrate to 1100. A yeast with high alcohol tolerance must be used, i.e. Lalvin EC-1118 or sherry yeast. When fermentation is nearly complete as evident by reduced activity, adding small amounts of sugar (one cup per 20L batch) every few days will keep the fermentation going until activity stops, the wine will then contain about 16 to 18 percent alcohol. 3. Freeze concentrating table wine: A table wine containing about 12% alcohol is placed in a semi- soft container into a freezer and left to freeze solid for 48 hours.

He has spent the last two decades producing some of Washington’s most well respected wines. Structured, elegant, and age worthy, they are a singular voice that has never adjusted in an attempt to chase scores or suit trends. Although always a focus, Chris’ attention to terroir has only intensified over time. Since 2001 he almost exclusively produces single vineyard blends as he feels this shows the terroir more clearly than a single varietal bottling. Currently he only sources from four vineyards that he feels provide the finest fruit: Champoux, Discovery, Two Blondes, and Ciel du Cheval. All Andrew Will wines are treated more or less the same in the cellar; 25-35% new oak barrels, aged for around 21 months, followed by a year of aging in bottle.

    2018 RESEARCH ANNUAL REPORT Dear Washington State Wine Industry Colleagues and Friends, In three short years, Washington State Wine has taken our viticulture and enology research program to new heights. We’re proud to share the 2018 program highlights with you in this annual report and hope you will take a few moments to learn more about the industry’s wine research program. The research program is guided by a well-defined strategic plan that was developed with broad industry input. It is one of a few in the nation funded by all wine grape growers and wineries in the state. In a nutshell, the program is: • Industry driven – research priorities are established by growers and wineries • Industry guided – funding recommendations are approved by industry • Accessible to all – winemakers and growers, regardless of size, have access to research results Washington State Wine Board members who sit on its Research Committee and volunteer industry mem- bers of the Wine Research Advisory Committee (WRAC), a subcommittee of Washington State Wine, play a crucial role for the wine research program. The Research Committee has fiduciary oversight and drives the Washington State Wine research program; WRAC works to keep the statewide viticulture and enology research program impactful and relevant to the wine industry. The ultimate goal is to help Washington wine producers—both growers and winemakers—grow even better grapes and make even better wine by providing science-based tools to help them improve. Research is a stra- tegic imperative for the industry’s continued health and long-term growth, and one of four pillars of Washing- ton State Wine’s overall strategic plan.
