German Cheese Cake

Tell us a bit about this recipe and why it is important to you, your family and your culture My mother who is of Ukrainian/Polish ancestry married to my father of German ancestry found this recipe a long time ago in a newspaper. When there was excess milk on the farm she made cheese and this was a tasty way to use that. While travelling in Eastern Europe I found that this type of cheesecake was often served at buffets, sometimes even for . It is most authentic made with a type of cheese made in that part of Europe called quark. Quark is easy to make at home but you can use commercial too, it just doesn't taste quite the same.

Ingredients Base 1 cup white flour ½ cup whole wheat flour ¼ cup brown 2/3 cups margarine or butter

Topping 2 eggs 3 cups quark or cottage cheese 3 tbsp. flour ¼ tsp salt ½ cup sugar 1 tsp ¼ cup milk (if the cheese is runny omit this) ½ cup raisins cinnamon to sprinkle on top

Directions Base directions Combine the flour and sugar and mix well. Blend the margarine in with a fork until it’s crumbly. Pat into a greased 8 by 8 pan

Topping directions Mix the eggs well and add the other ingredients in the order listed. Mix well. Pour over the base and sprinkle cinnamon over the top.

Bake in a 350 degree oven for about 45 minutes until the center is not runny. Enjoy. Your Name (Optional)
