  • Burgerville – Fresh out of Local and Sustainable by James Sterns and Jeff Harvey1 January 31, 2016
The 2016 AAEA GSS and AEM Jointly-sponsored Case Study Competition, Boston, MA, July 31, 2016 Burgerville – Fresh out of Local and Sustainable By James Sterns and Jeff Harvey1 January 31, 2016 Abstract Entering its 55th year in business, Burgerville always has been a company anchored in a core set of values and business practices. Central to these has been a commitment to “fresh, local and sustainable” food sourcing. Burgerville is confident consumer demand will remain strong for locally sourced foods, yet the company needs Pacific NW producers and supply chain partners who are willing to invest in long-term commitments to a regionally- focused food system. This case presents the challenges and opportunities for such a system and concludes by asking readers, “What would have to happen to have Pacific Northwest agricultural producers, agribusiness and food processors commit to locally-sourced food supply chains?” Introduction Jeff Harvey, President and CEO of Burgerville, hung up the phone in frustration bordering on exasperation. Yet another supplier, this time an onion grower from Washington State, was letting Jeff know that this may be the last year that he would be a supplier for Burgerville due to changes in his production and supply chain strategies. It was early August and Burgerville was in the middle of its seasonal promotion campaign highlighting locally sourced onion rings made from the region’s signature mild sweet Walla Walla onions. In the highly competitive fast food world of hamburgers and fries, Burgerville had made a name for itself in the Pacific Northwest by emphasizing not only good value for the customer’s money but also a set of core values that centered on service to their customers and local communities.

  • Keto and Fast Food
Keto and Fast Food: On the Go Whether you’re out and about and need a quick meal, or you want to go out with family to have a sit-down dinner, you should be able to find low-carb and ketogenic friendly foods at most places. We’ve all been there. You’re out running errands on a Saturday afternoon and your tummy growls: it’s 2 pm and you haven’t eaten yet! Or it’s a Tuesday night at a friend’s house, and they want to grab a meal. What do you do? Luckily, you have plenty of keto fast food and sit-down restaurant options! We have happily eaten my way through the research for you – below you’ll find a look at the most common fast food restaurants in the U.S. and their keto meal options. Here are a few general rules of thumb that you can apply to almost any fast food and sit-down restaurant: ■ Stick to meat, cheese, and vegetables. Most fast food and restaurant places put excess sugar and carbs in their ingredients. It’s worth sticking with the simplest ingredients you can find. ■ Avoid the bun. Whether you’re ordering a burger from a drive-thru or a table menu, you can opt out of the bun. Typically you can also add in extra sides like avocado, bacon, and sauces if you request it. ■ If you get a salad, read the ingredients. Many salads have leafy greens and berries that are very high in carbs. It’s better to stick with simpler salads that include meat and ask for dressing on the side.

Bryan Schaaf: We're back here on the Meat Speak Podcast. We are sitting in the Ohio City Galley at the corner of... What is this? West 25th and Detroit, right? Overlooking the Detroit Superior Bridge and beautific downtown Cleveland, Ohio. With me here, it was a rare opportunity to have three of the biggest burger... Is aficionado or enthusiast a good way to describe this? I mean, do you like to be described as being enthusiastic about burgers or does that just sound a little strange?... Oh, there you go. Alvin Cailan: Enthusiast, I feel like I grew into that just recently, but I've always just been a burger lover. Bryan Schaaf: Yeah. Alvin Cailan: I've never been that... Like, you talk to some chefs that are just like, "Oh, [inaudible 00:00:54] burger. I don't care about burgers." It's like, I've never really felt that way. I've always liked it. It's a thing, and I recognize it as a real dish, so yeah, burger lover is more accurate for me. Bryan Schaaf: Burger lover. I feel like that's a website somebody has to create. Brett Sawyer: I know what you mean. Bryan Schaaf: It's the newest dating website, right? Brett Sawyer: [inaudible 00:01:13] get a lot more restaurants you can go to, as well. Bryan Schaaf: That's right. Alvin Cailan: Yeah. For more details, please contact Brian Darr at: 312-655-0594 or [email protected] Hot brewed coffee is the most consumed beverage in America after tap water. Over 40% of adult Americans drink brewed coffee on any given day resulting in a daily incidence that surpasses that of bottled water, juice, and soda. While coffee is king, on any given day, roughly one-quarter of adult Americans drink iced tea while less than one in five drink hot tea. Tea menu penetration is currently high, but QSRs in particular have seen growth in the number of teas being offered. These are just a couple of the many key findings from Datassential's new Non-Alcoholic Beverage Keynote report that you can use to gain valuable insight into the beverage landscape. Every week, two out of three Americans eat pizza. In fact, the average consumer orders pizza away- from-home five times a month.
