Cauliflower SELECTION: • Cauliflower crowns, also known as curds, in their peak of freshness will be firm, crunchy and range in color from orange, green, purple and, most commonly, white. • Avoid cauliflower crowns with soft spots or yellow or brown discoloration. STORAGE: • The best way to store cauliflower is in your refrigerator’s fruit and vegetable drawer. You can store the whole crown or in bite-size pieces in air tight containers for snacking or pre-cooking preparation. • Before storing cauliflower in your refrigerator, submerge the crowns or pieces in a bath of salted cold water for 15 minutes to thoroughly rinse away any residual pesticides or insects. Stir-fry Cauliflower Rice

Source: Defense Commissary Agency Ingredients: 5 - 6 servings • 2 tsp. sesame oil • 2 tsp. sunflower, safflower, or coconut oil • 1 large carrot, finely diced • ¾ cup red onion, finely diced • ½ head cauliflower, finely chopped to rice-sized bits (use a food processor to save time) • ¼ cup water or low-sodium broth • 1 tbsp. reduced sodium soy sauce (or teriyaki sauce) • 2 green onions, sliced • A pinch of garlic powder and ginger to taste • Fresh cilantro or coriander leaf (optional) • Toasted nuts or sesame seeds (optional)

Directions: 1. In a large sauté pan, heat the oil over medium- high heat. Add the carrot. Sauté for about 2 minutes then add the onion. Cook covered for 3-5 minutes, stirring occasionally until onions are soft and translucent. 2. Stir in the cauliflower and ¼ cup water/broth. Reduce heat to medium, cover and cook for 5 minutes, stirring halfway through the cooking time. 3. Stir in the soy sauce (or teriyaki sauce) and the green onions. 4. Check for doneness. Don't overcook! The cauliflower should have a little texture and not be mushy.

Tips: • Pair with a high-quality protein (edamame/tofu, grilled chicken, scrambled eggs, or baked salmon) and a side of steamed broccoli or green peas. • A great replacement for traditional fried rice!

Shepherd’s Pie with Cauliflower Topping

Source: Defense Commissary Agency Ingredients: 6 servings • 1 tbsp. olive oil • 1 small onion, diced • 2 garlic cloves, minced • 1 lb. lean ground beef • ¼ cup ground mushrooms • 12-14 oz. frozen peas and carrots • 1 medium cauliflower cut into florets • 2 tbsp. butter • ½ cup evaporated skim milk • ½ cup shredded cheddar cheese (optional) • Pinch each of salt and pepper Directions: Preheat oven to 350 degrees F. 1. In a large frying pan, bring the olive oil to temperature over medium heat. Add the garlic and onion. Cook until they are soft (for about 2 minutes), stirring frequently to prevent the garlic from burning. 2. Add the ground beef and mushrooms to the pan while stirring frequently, breaking the beef into small pieces. Cook until the beef is brown. Drain excess fat and discard. Add a pinch of salt and pepper (optional). 3. Bring 3-4 cups of water to boil in a large sauce pan. Add the cauliflower florets, turn heat down to medium high. Cover and cook until the cauliflower is tender (about 7-8 minutes). Turn the burner off. Gently drain the cauliflower into a colander. Add back to the pan. Allow the steam to escape and excess water to dry, tossing gently. Add the butter, shredded cheese (optional) and a pinch of salt and pepper. Begin mashing with a fork. Once the cheese and butter have melted, add the evaporated milk and a pinch of salt and pepper (optional). Whip the mixture with a hand held whisk or fork to incorporate the milk. 4. It’s often the best strategy in achieving and maintaining a healthy eating pattern. One path to take this: aim to cook 2 more meals per week at home that include at least 4-5 food groups (fruits, vegetables, whole grain, dairy, and protein foods) and/or 2 or more servings of vegetables. Although all Americans know that fruits and vegetables are important in their diet, current data shows the average daily American consumption still falls below the recommended amount. One reason consumption of produce (fresh, canned, and frozen) is less than stellar is our over-reliance on fast foods. Perhaps it’s because of our busy schedules, the perceived cost of eating healthy, and fears of actually getting into the kitchen to cook. Let’s face it, as we have come to rely on prepared foods, our nations' cooking skills have decreased. Combine this with all of the cooking shows featuring beautifully prepared dishes with pricey ingredients, and the thought of trying seems futile. This is not the case! Removing the entertainment factor of pretty, gourmet dishes, the belief that eating healthy is too expensive, and the burden of time; all Americans can easily nourish themselves. Adopting the strategies of stocking our homes with economical pantry and freezers staples, choosing recipes that are inclusive of as many food groups as possible, and focusing on quick dishes that make waiting in a drive-thru seem wasteful, and focusing on the flavor factor over looks, every American can improve the nutrition quality of their diet. For those days where you don’t know what to make for dinner and don’t have the energy, know that you can rely on frozen vegetables, whole grains like pasta, quinoa and brown rice, lean ground meats (that can be thawed quickly in the microwave), low-sodium canned vegetables, diced tomatoes, and even instant potatoes to prepare a comforting, nourishing dish in minutes. Most times, a meal prepared at home will be higher in nutritional quality and lower in calories, especially when they are made up of the suggested items above. This featured meal takes advantage of all pantry staples. Use this as a roadmap for future skillet, quick dishes. For those that are pressed for what to cook for lunch, consider this dish for the office a couple of days of the week. This dish also does great for single serving, freezing for that hungry teenager after school.

Ingredients: 4 servings • 1 lb. very lean ground beef • 2 tsp. onion powder • 2 garlic cloves minced or 1 tsp. • 8 oz. whole wheat egg noodles • ¼ tsp. black pepper garlic powder • 1 cup frozen peas • 1 tsp. salt • 4 oz. canned mushroom slices, drained • ¾ cup frozen carrots • 2 tbsp. + 2 tsp. all-purpose flour • 1½ cups skim milk • 2 tsp. olive oil • 2 bay leaves (optional)
