"The first use of the name 'Old Fashioned' for a bourbon whiskey cocktail was said to have been at the Pendennis Club, a gentleman's club founded in 1881 in Louisville, Kentucky. The recipe was said to have been invented by a bartender at the club in honor of James E. Pepper, a prominent bourbon distiller, who brought it to the Waldorf-Astoria Hotel bar in New York City." -Albert Stevens Crockett (1935) in The Old Waldorf-Astoria Bar Book House Old Fashioned 10 Buffalo Trace, Angostura and Reagan's Orange bitters, sugar Lincoln County Way 12 George Dickel Rye, cranberry and transatlantic bitters, demerara The Emperor 14 Suntory Toki, krupnik honey and winter melon bitters, sugar Fairfield 14 Henry McKenna Single Barrel, xocolatl mole and burlesque bitters, demerara Triple Crown 12 Old Forester 100, cranberry and mole bitters, sugar Wyrmtongue 14 Banhez Mezcal, hopped grapefruit and emakule tiki bitters, honey From Speyside With Love 16 Glenfarclas 12yr, xocolatl mole and burlesque bitters, demerara Goose Hollow 16 Burnside Bourbon Goose Hollow RSV, transatlantic and NE cranberry bitters, sugar Kiss the Rock 12 Tullamore Dew, honey and melon bitters, demerara Sugarcane Bill 14 Mount Gay Black Barrel Rum, hopped grapefruit and tiki bitters, demerara We proudly use Bittermen's Bitters, and stand behind what they represent. The term ‘whisky‘ derives from the Gaelic usquebaugh – itself from the Scottish Gaelic uisge beatha, or the Irish Gaelic spelling uisce beatha. Uisce comes from the Old Irish for ‘water’ and beatha from bethad, meaning ‘of life’. With this in mind, whisky is etymologi- cally linked with a great number of spirits, all of which refer to the origins of the spirit – the quest for the elixir of life. The spelling of whisky, or whiskey, differs geographically. As a rule, American and Irish prefer ‘whiskey’ and the Scots, Canadians and the rest of the world’s single malt makers prefer ‘whisky’. This originated during the 19th century. For in around 1870, Scotch whisky was of very low quality, much of it being distilled poorly in Coffey stills. For exportation to America, the Irish distillers wanted to differentiate their product from the poorer Scotch whisky, thus they added the ‘e’ to mark the crucial distinction. Today, Scotch whisky has become one of the world’s greatest spirits, but the spelling still differs. - Master of Malt Sun-Wed 12pm-10pm | Thurs-Fri 3pm-11pm | Sat 12pm-11pm 710 SE 6th Ave. Portland,
