2018 Raison d’Être – 8.4% – £27+VAT 6x75cl (£4.50+VAT per bottle) Raison d’Être is the quintessential expression of ourselves; the purest definition of what cidermaking means on our farm. This cider is bone dry, fermented in an oak cask and aged, patiently and quietly, before bottle conditioning. 2018 was an exceptional year for cidermaking. The hot summer meant that sugars, alcohol, and flavour intensity all skyrocketed. This is a special vintage. - 75 cases available as of 21/06/21

2019 /Bramley Oak Cask - 7.4% - Sparkling Collaboration Cider - £28.80+VAT per case (4.80+VAT per 75cl) A joining of worlds. Ross on Wye’s Dabinett, fermented in Kentucky oak barrels, with its aromatic vanilla, gentle and complex tannins, melded with Nightingale’s Bramley, with bracing acidity and delicious green sourness. We tried a dozen blends, but this one tells a story of East and West, of Kentish and Herefordian cidermaking. - 50 cases as of 21/06/21 2019 Hagloe Crab & Bulmers Norman – 6.0% - £24+VAT/case (£4.00+VAT per bottle) Hagloe Crab is an 18th century variety from Gloucestershire, thought lost but rediscovered, this is our second vintage from young trees. Bulmers Norman is a widely grown bittersweet , which softens the Hagloe’s crisp acidity. A bright palate of fresh, fruit notes - peach and nectarine shine through, with charismatic tannin from the Norman on the finish. -40 cases as of 21/06/21

2019 HMJ + Dabinett + Reinette d’Obry – 7.4% - £24+VAT 6x75cl The three varieties in this cider were pressed and fermented individually, matured and then blended for bottling by us on a cold December morning. It begins with HMJ, a full and grippy bittersweet apple. We add another: Dabinett, fruit- forward and flavoursome. To complete, Reinette d’Obry, a light, yellow, acidic variety that was fermented in oak. Together they produce a cider with balance, body and verve. There is bright juiciness that leads into a deliciously well- ordered symphony of tannins, fruit and oak cask. 95 cases as of 21/06/21

2019 S.V. AOC – 8.0% – £27+VAT 6x75cl Kingston Black is a revered bittersharp apple that originated in Somerset in the 1800s. Unique for having both luscious acidity and prominent tannins, it became widely planted, despite the tree itself being very frustrating to grow. Such was the quality of the cider, that many of us persevered, and here we have been rewarded. Fermented in fresh Kentucky oak, the result is a cider of vivid juiciness, aromatic vanilla, big ripe red apples, and a gentle tannic finish. 90 cases as of 21/06/21

2018 Dabinett S.V. Oak Cask – 7.6% – £27+VAT 6x75cl Dabinett always stands tall as a bittersweet of supreme quality, and the 2018 vintage was a standout year for sunshine. This cider reflects those conditions; it is intense, vibrant, and juicy. Just a single barrel bottling, which was fermented in a neutral container before maturing in oak. That oak has given this cider another layer of flavour, with chocolate and vanilla notes. Scrumptious! 1 cases as of 21/06/21

2019 Spanish Blend Cider – 6.0% - £27+VAT 6x75cl In 2014 we grafted a row of Spanish varieties, managing to lose the list identifying them in the process. Nevertheless, this is their first crop, and we are delighted. In homage to the principles of Sidra Natural but inspired by Herefordshire principles, we primed this cider with freeze concentrated juice from the same trees. The flavour profile is reminiscent of the best Basque ciders, but unmistakably Ross on Wye in character 25 cases as of 21/06/21

2019 Dabinett + Ashton Bitter + Browns Apple – 7.4% – £24+VAT 6x75cl This is the classic Herefordshire style blend: 75% bittersweet (two parts Dabinett, one part Ashton Bitter) with 25% sharp to add some juicy acidity and balance in the form of Browns Apple. We gained further complexity by fermenting the Browns and Ashton Bitter in Kentucky and Scottish oak casks respectively. This is cider at both its most simple – just use apples, barrels & time – and its most complete – full ferment tannic and acidic apples balancing dryness, fruit and wood. 120 cases as of 21/06/21

2019 ONE JUICE Dabinett/Browns – 7.4% – £24+VAT 6x75cl This is just our edition of the One Juice, not the mixed cases. In 2019 we pressed 5,000L of juice that was distributed equally to Oliver’s Cider, Little Pomona, Hogan’s Cider and Pilton Cider – each of us fermenting 1,000L in our own unique way. Our edition is the ‘control’ blend: a delicious, simple cider made with 80% Dabinett and 20% Browns Apple. A pure juice, naturally fermented dry cider blend that sets the standard for what great natural cider is. Balanced, full bodied and exceedingly drinkable. Perry!

NEW RELEASE: 2019 Gin Pear S.V. – 4.0% – £27+VAT 6x75cl A variety of outstanding quality, Gin Pear, named for its aromatic elderflower and juniper notes, ripens late in the season and produces a perry with a hint of sweetness that is balanced with delicate astringency. 2019 was a year marked by low sunshine, which resulted in this rather drinkable 4.0%, pure juice perry! May contain a natural sediment from bottle conditioning. We bottled this perry in September 2020 pét nat style, and it took along time to start conditioning, but now, it is ready. We have disgorged just prior to release, though sediment will re-appear. 2017+2018 Blakeney Red + Barland + Bartestree Squash – 6.7% – £24+VAT 6x75cl This blend won First Prize for Dry Perry at the 2019 Big Apple Perry Trials in Putley, Herefordshire! Blakeney Red provides fruitiness and sweetness; Bartestree Squash brings body and softness, and Barland, a centuries-old variety, brings brilliant acidity and tannin. This is a perry full of life, flavour and joy. Enjoy every note. Bottle conditioned perry produces a harmless natural flaky sediment. - 10 cases as of 21/06/21

2018+2019 Blakeney Red S.V.P – 6.0% – £24+VAT 6x75cl A rich, vibrant, fruity blend of Blakeney Red – the most widely grown Perry Pear. One third oak cask from 2018, with two thirds young and lively 2019 season. The resultant Perry is a complex mix of seasons that thrills the tastebuds with a full body and a mischievous sweetness. - 15 cases as of 21/06/21

2019 Red Pear S.V. – 6.7% – £27+VAT 6x75cl A variety of such provenance that it was mentioned in John Evelyn’s Pomona of 1662. Grown in Herefordshire generation by generation ever since, it produces a perry of high quality. It has an iconic and inviting perry pear aroma, with a creamy, nutty sweetness that gives complexity and delicacy to the soft finishing tannins. One of our favourite pears. May contain a natural sediment from bottle conditioning. - 15 cases as of 21/06/21
