    Recipes From Philip Greene’s Smithsonian Associates Classic Summer Cocktails Seminar [email protected] Classic Highball 2 oz spirit 4 oz carbonated mixer Serve in a tall glass on ice. Garnish lemon or lime wedge/peel Moscow Mule 2 oz vodka ½ oz lime juice 4 oz ginger beer Add all ingredients to a copper mug (or rocks glass). Garnish with the lime hull. Audrey Saunders’ delicious riff on the Moscow Mule, the Gin-Gin Mule ¾ oz fresh lime juice 1 oz simple syrup 2 mint sprigs 1¾ oz Tanqueray London dry gin 1 oz homemade ginger beer* Shake all ingredients well, strain into a tall Collins glass filled with fresh ice. Garnish with a lime wheel, a sprig of mint and a piece of candied ginger. Serve with a straw. *Ginger Beer 1 gallon water 1 pound ginger root, peeled 4 oz light brown sugar or 6 oz light agave syrup 2 oz fresh lime juice Place the water in a sauce pan, bring to a boil. Cut the ginger into smaller pieces and mix this in a food processor with some of the hot water until the mixture resembles mulch. Then add this back into the pot of water, turn off the heat, cover, and allow it to steep for one hour. Once cooled, strain the mixture through cheese cloth or a sieve, extracting as much flavor from the solids as you can. Discard the solids. Add the lime juice and sugar/syrup, stir. Let cool, then transfer to bottle(s). Store in refrigerator. Note: this will not yield a conventional, carbonated ginger beer.

    Dan Wallach’s Favorite Cocktails Martel College Cocktail Class February 23, 2012 Cocktails have a long and wonderful history. As long as our society has had alcohol, we’ve mixed it with things, perhaps to cover up bad tastes or perhaps to create sublime tasty goodness. Tonight, we’re going to make three different cocktails that will cover many of the core techniques that you need to make just about anything. We’re going to be precise about our measurements, at least for the first two cocktails, because this helps you get the flavor balance right (and reproducible) and it also helps you control your guests’ alcohol consumption. The Sazerac Originating somewhere in the 1800’s in New Orleans, a proper Sazerac uses rye whiskey (the spicier cousin of the more common bourbon whiskey). There’s naturally some controversy over precisely how it should be done. The recipe here trades some authenticity for practicality, but I promise, it tastes perfect. Ingredients: 2 oz rye whiskey (typically 40-50% ABV) ½ oz simple syrup (purists would use a sugar cube, but it’s a pain to get it to dissolve) 2 dashes Angostura bitters 2 dashes Peychaud bitters rocks glass, chilled, and rinsed with just a drop of absinthe lemon peel (garnish) In your mixing glass, combine the rye, simple syrup, and bitters with some ice cubes. Stir (to cool down the ingredients and add some water from melted ice). Meanwhile, put a small amount of absinthe in the chilled rocks glass and rotate the glass to coat with absinthe. Pour the whiskey mixture into the final rocks glass.

The First: Developed by pharmacists, sold as a daily tonic for a range of ailments and proposed health benefits. •Angostura: developed in Venezuela in 1824 - produced in Trinidad as a stomach ailment remedy. Later becomes most commonly used bitters •Rum based, bittered by gentian, dominating flavors of cinnamon, clove, orange peel, and coffee. • Peychaud’s: created in early1800s by apothecary extraordinaire Antoine Amedee Peychaud in New Orleans. • Based on neutral spirit, bittered with gentian and carrying light flavors of anise and cherry. Distinctive red color. Classic ingredient in the original Sazerac cocktail.
