OSPI CNS Child and Adult Care Food Program Reference Sheet

Whole and Enriched Grains USDA’s Rule of Three teaches sponsors to identify -rich products for the Child and Adult Care Food Program.

Requirements:  The first ingredient (or second after water) must be whole or enriched grain.  The next two grain ingredients (if any) must be whole grains, enriched grains, , or germ.

Non-creditable Grains or – Cannot be one of the first 3 grain ingredients  Any bean flour  Malted barley flour  Any nut flour  Oat fiber  Barley malt  Potato flour  Bromated flour  Rice flour  Corn   Corn fiber  Wheat flour  Degerminated corn meal  White flour  Durum flour  Yellow corn flour  Farina  Yellow corn meal

Example: Ingredients: “Water, whole wheat flour, yeast, sugar, enriched white flour, , brown rice flour, salt.”  The first ingredient after water is a whole grain.  The second grain ingredient is an enriched grain.  The third grain ingredient is a whole grain. This product passes the rule of three test.
