Indarto, and Soeparno1 1Faculty of Animal Science, Universitas Gadjah Mada, Yogyakarta, 55281 E-mail: [email protected] (Diterima: 23 Februari 2017; Disetujui: 12 April 2017) ABSTRACT Sixty male broiler chickens was used to investigate the effects of dietary soybean meal (SBM) with soy-milk waste (SMW) substitution using growth performance, protein-energy efficiency ratio, and physical meat quality as response criteria. The birds were given control diet (SMW-0), or a control diets with 5% (SMW-1), 10% (SMW-2), and 15% (SMW-3) soy-milk waste substitutions. Each treatment was replicate 3 times, with 5 birds per replication. The obtained data were subjected to Oneway arrangement of A129A, and continued suEsequently with Duncan‘s new 0ultiple Range Test. Results showed that substituting SBM with SMW did not influence protein and energy consumption, as well as feed consumption and energy efficiency ratio. However, dietary substitution with 10% SMW improved (P<0.05) protein efficiency ratio, body weight gain, and slaughter weight, resulting in lower (P<0.05) feed conversion ratio. The meat pH, water holding capacity, cooking loss, and tenderness values did not influence by 5-15% SMW substitution. The Healthful Soybean
FN-SSB.104 THE HEALTHFUL SOYBEAN Soy protein bars, soy milk, soy cookies, soy burgers .…. the list of soy products goes on. Soybeans are best known as a source of high quality protein. They are also rich in calcium, iron, zinc, vitamin E, several B-vitamins, and fiber. But in 1999, soy took the nation by storm. The Food and Drug Administration approved health claims that soy protein may lower the risk of heart disease if at least 25 grams of soy protein are consumed daily. This benefit may be because soybeans are low saturated fat, have an abundance of omega-3 fatty acids, and are rich in isoflavones. Research continues to explore health benefits linked to the healthful soybean. Beyond research, edamame, tempeh, tofu, and soy milk make the base for some truly delectable dishes. Exploring Soyfoods Fresh Green Soybeans Edamame (fresh green soybeans) have a sweet, buttery flavor and a tender-firm texture. Fresh soybeans still in the pod should be cooked and stored in the refrigerator. Handle frozen soybeans as you would any other frozen vegetable. The easiest way to cook washed, fresh soybeans in the pod is to simmer them in salted water for 5 minutes. Once the beans are drained and cooled, remove them from the pod. Eat as a snack or simmer an additional 10 to 15 minutes to use as a side dish. Substitute soybeans for lima beans, mix the beans into soups or casseroles in place of cooked dried beans, or toss the beans with pasta or rice salads. Their digestibility and odour variance were also quantified. Okara had the greatest content of protein (306.1 g/kg) and amino acids (340.6 g/kg dry matter; DM), while soy hull had the highest amount of dietary fibre (546.7 g/kg) and extractable pectin (47.4 g galacturonic acid equivalents/kg DM), and molasses possessed the most abundant total phenolics, resulting in its highest radical scavenging activity. The high unsaturated fatty acids presented in soy by-products (accounting for 73.1-82.3% of total lipids) indicated their favourable physiological functions. In simulated digestion test, the by-products generally underwent fast digestion within the first 30 min in gastric digestion step, and then slowed down. However, okara was still digested rapidly in the stimulated intestinal digestion stage. Electronic nose was able to clearly discriminate the odour differences among the three soy by-products. -

All-purpose flour ½ cup Scallions, sliced thinly 1 Tbsp. Garlic, minced ½ Tbsp. Korean red pepper paste ½ cup Soybean paste, Korean 1 cup Light soy sauce 1 tsp. Cabbage, green, ¼” wide 4 cups chiffonade, 1” lengths Bean sprouts, cut into 1” lengths 2 cups Sesame oil 1 Tbsp. Kosher salt as needed Ground black pepper as needed Eggs, beaten lightly 4 ea. Method 1. The day prior to cooking, blanch the beef bones. Bring blanched bones and beef to a boil, lower to simmer. Remove beef when it is tender, plunge in cold water for 15 minutes. Pull into 1-inch length strips, refrigerate covered Add onions and ginger, simmer for an additional hour, or until proper flavor is achieved. Strain, cool, and store for following day (save fat skimmed off broth). 4. On the day of service, skim fat off broth - reserve, reheat. 5. Render beef fat, browning slightly. Strain, transfer ¼ cup of fat to stockpot (discard remaining fat), add flour to create roux, and cook for 5 minutes on low heat. -

SOY FREE DIET AVOIDING SOY An allergy to soy is common in babies and young children, studies show that often children outgrow a soy allergy by age 3 years and the majority by age 10. Soybeans are a member of the legume family; examples of other legumes include beans, peas, lentils and peanut. It is important to remember that children with a soy allergy are not necessarily allergic to other legumes, request more clarification from your allergist if you are concerned. Children with a soy allergy may have nausea, vomiting, abdominal pain, diarrhea, bloody stool, difficulty breathing, and or a skin reaction after eating or drinking soy products. These symptoms can be avoided by following a soy free diet. What foods are not allowed on a soy free diet? Allergy: Soya Free Diet
Patient Information Department of Nutrition and Dietetics Allergy: Soya free diet This is a leaflet designed to give you, your family and friends, dietary information and helpful tips on avoiding soya. Introduction Intolerance to the protein in soya can occur. To prevent symptoms, all soya and foods containing it must be removed from your diet. Before going on a soya free diet you should discuss it with your doctor. Removing soya from the diet does not put you at nutritional risk but soya does appear in a wide number of products and not eating these will affect the variety of your diet. If your reactions to soya have been severe and immediate, such as lip swelling, an immediate rash or sickness, do not re- introduce soya without first talking to your doctor or dietitian. If you have removed soya from your diet, as a trial, but have found no improvement after two weeks try slowly reintroducing soya back into your diet. How can I tell if a food contains soya? Food Labelling Every pre-packed food, including alcoholic drinks, sold in the UK and European Union (EU) must show clearly on the label if it contains any of 14 major allergens. These must be highlighted (in bold, colour or underlined) on food labels within the ingredients list. This includes soybeans (soya). It is not compulsory for food manufacturers to use a warning statement – always check the ingredients first. Patient Information Soya is added to a wide range of manufactured products. You will have to check the ingredient list on all manufactured foods to see if soya is present.
