    Carrot Pudding with Raisins and Pistachios Adapted from Madhur Jaffery;s Indian Cooking, Barron’s, 1983 I start this recipe by condensing the milk, but you can start with half the amount of milk, and a can of sweetened condensed milk, if you want your halva to come together faster. The rose water is the biggest deviation from tradition in this recipe, but K.M. and I both like the addition. But don’t hesitate to leave it out if you can’t find it, or want a more authentic taste. 2 quarts whole milk – preferably non-homogenized ½ cup sugar ½ teaspoon salt 12 cardamom pods 1 ½ inch stick of cinnamon ½ cup raisins ¼ cup rose water 1 cup pistachios, shelled, toasted 4 tablespoons Cardamom sugar (recipe follows) 1 lb. carrots, grated Heat the milk in a heavy sauce pan over medium heat. Add the sugar and spices and then stir until the sugar dissolves. Try to keep the milk simmering just below a boil, and stir it frequently, reducing the heat as necessary to prevent a burn. Your goal is to reduce the milk by half, which will take at least an hour or more – depending on the size of your pan; the wider the pan, the faster the reduction. While the milk reduces warm the rose water in the microwave for about 40 second, and then soak the raisins in the water – you can also do this the night before. Keep the raisins in the water for a least an hour. Using the pulse setting on the food processor roughly chop the pistachios.

Wash and zest 2-3 large carrots using a box grater or a food processor. Zest 1 lemon. measure + combine + whisk To a large mixing bowl, measure and combine 1 C all-purpose flour, ½ tsp baking soda, ½ tsp salt, and 1½ tsp pumpkin pie spice/ground cinnamon. Whisk together! To a separate mixing bowl, measure and combine ½ C brown sugar, ¼ C unsweetened apple sauce, ¼ C melted butter or oil, ¼ C canned crushed pineapple, and 2 tsp vanilla extract. Whisk together! fold + oil + bake Fold the dry ingredients into the wet ingredients. Add 1½ C grated carrots and lemon zest and gently fold them into the batter. Then add 1 tsp oil to each cupcake well of your tin. Drop rounded tablespoons of batter into each well. Bake for 15-18 minutes, until doughnut holes are baked through.     1 INTRODUCTION Swallowing can become a significant problem for patients with ALS; and the joys and pleasures of eating become replaced with discomfort and anxiety. At an early stage patients may begin to have difficulty with foods such as popcorn, cornbread or nuts, and choking episodes may occur. Subsequently other foods cannot be swallowed readily, and the effort of chewing and swallowing turns a pleasurable experience into a burden. For the patient, the act of swallowing becomes compromised and the ordeal of eating becomes more time consuming. For the spouse, the task of preparing edible and appetizing foods poses an increasing challenge. The following collection of recipes is derived from our patients and their creative spouses who translated their caring into foods that look good, taste good, are easy to chew and to swallow, and minimize discomfort. Included are recipes for meats and other protein containing foods, fruits or fruit drinks, vegetables or dishes containing vegetables, as well as breads. Selections of beverages, desserts, and sauces are provided to add needed fat and calories to the diet. A balanced diet normally supplies enough nutrients for daily needs plus some extra. It is recommended that daily menu plans be made using the Basic Four Food Groups as the backbone. Pour into greased pie plate, sprinkle with grated cheese and bake at 350° — 20 minutes. POTATO CASSEROLE potatoes, pared and 2 tbsp. chopped onions sliced thin, 1 quart y% cup bread crumbs 1 tsp. salt 2 tbsp. butter % tsp. pepper 1 cup milk Place half the potatoes in greased casserole. Sprinkle with half salt, pepper, onion and crumbs. Dot with butter. Repeat with remaining ingredients. Add milk, cover and bake 30 minutes in 350° oven, uncover, continue baking additional 30 minutes. Grated cheese may be sprinkled on top. HOT CARROT MOLD 3 bunches of carrots 3V2 tbsp. flour 3 eggs 31/0 tbsp. butter 1 cup milk salt Cook carrots. Mash. Add remaining ingredients. Spread in a buttered ring mold and place mold in a pan of water.

    Desserts of the World: India Presented Jan 15, 2019, by Varsha Pathare Gajar Halwa (carrot pudding) Ingredients 1 pound carrots, peeled and shredded 3 Tablespoons ghee ¾ cup sugar ½ cup ricotta cheese ¼ teaspoon cardamom 2 teaspoons almonds and pistachios (chopped/sliced) for garnish Directions 1. Heat ghee in a pan over medium low heat. Add shredded carrots, stir well and cover. Cook for 5-10 minutes, stirring occasionally, until carrots are soft. 2. Add sugar and stir well. Cook for 3-5 minutes until sugar is well-incorporated. The mixture will start to look sticky. 3. Add ricotta cheese and mix well. Add cardamom and stir well. Garnish with nuts. 4. Gajar halwa can be served warm or cold. Kheer (vermicelli pudding) Ingredients ½ cup vermicelli, broken in ½-inch pieces (see note, below) 1 Tablespoon ghee ¾ cup half and half ½ cup heavy whipping cream ½ cup sugar ⅛ cup golden raisins ¼ teaspoon cardamom ¼ teaspoon nutmeg 1 Tablespoon ground almonds ⅛ cup sliced/chopped almonds and pistachios for garnish Directions 1. Heat ghee in a pan over medium-low heat. Add broken up vermicelli and sauté for 2-3 minutes until the pieces turn golden brown, taking care not to let them burn. 2. Add half and half and whipping cream. Let the mixture come to a boil, stirring occasionally, taking care to prevent burning and sticking to the pan. Boil gently for 3-5 minutes. 3. Add sugar and stir well. Return to a gentle boil. Stir continuously to prevent sticking. 4. The mixture will thicken as it simmers. Add ground almonds and return to boil, let simmer 1-2 minutes.
