Vegan Consumes only plant products Lactovegetarian Consumes plant products & dairy products Lactoovovegetarian Consumes plant products, dairy products and eggs Can a vegetarian diet be part of a renal diet? The answer is yes. The patient with kidney disease who is a vegan has a real challenge to eat enough protein without adding too much phosphorus and potassium from the protein source. You will need to eat more tofu and fewer seeds, legumes and nuts to meet your daily protein needs. You may also need to increase the binders at mealtimes when eating the vegetarian foods. Firm/Extra-firm tofu is drier than other types and crumbles well. It can be grilled, baked or fried. Regular tofu is much softer than the firm/extra firm tofu and can be used to make patties or meatloaf. Mori-Nu tofu is a silken tofu and has a very smooth texture. It can be used in puddings or other creamy products. The firm and extra firm tofu has more potassium and phosphorus than does the regular silken types. Recipes with Tofu Mock Egg Salad 8 oz. firm tofu ½ tsp celery seed 1 Tbsp. prepared mustard 1/8 tsp pepper 1 Tbsp honey ¼ cup minced celery 2 tsp vinegar ¼ cup minced green pepper ½ tsp tumeric ½ tsp onion powder Drain tofu. Crumble tofu in a bowl. Combine the next 7 ingredients in a dish and pour over tofu. Mash together well. Add celery and green pepper. Mix well. For flavors to blend, chill for 2 hours. Nutrient content (per ½ cup serving)- 96 calories, 12 g carbohydrate, 7 g protein, 285 mg potassium, 99 mg phosphorus 3 The Renal Vegetarian Challenge July 2011 Maple Tofu Pudding Soft tofu makes the best puddings. The pudding is rich and creamy and very satisfying. This recipe makes 4 servings. 12-14 ounces (approximately 1 ½ cup) soft tofu ¼ cup corn oil 1/3 cup pancake syrup (use artificial maple flavor as real maple syrup has more potassium) ¼ tsp vanilla extract 1. Drain the tofu and cut it into small pieces. 2. Place the pieces in a blender. 3. Add the oil, syrup and vanilla. Put the lid on the blender. 4. Process the mixture for a minute or two, or until the pudding is quite smooth. 5. If necessary, turn off the blender, and scrape down the sides of the blender jar. 6. Then put the lid back on and process some more. 7. When the mixture is smooth, put it in 4 small, reusable, half-cup containers. 8. Chill until serving time, or serve right away if desired. Nutrient content: 6 g protein, 22 g carbohydrate, 150 mg potassium, 120 mg phosphorus 4 The Renal Vegetarian Challenge July 2011 Tofu Rice Burrito (Recipe makes one burrito) 1 soft tortilla shell 2/3 cup cooked white rice 1/2 cup raw tofu cubes ¼ cup chopped green pepper ¼ cup chopped onion 1 Tbsp cream cheese 2 Tbsp salsa Stir fry or microwave tofu with onion and green pepper until softened. Add cream cheese to tofu and vegetable mix until mixed well. Add salsa and rice; mix well. Spoon mixture in tortilla shell and bake in 350 degree oven for 10 minutes. 1 burrito: 10.5 g protein, 41 g carbohydrate, 261 mg potassium, 156 mg phosphorus Supplements for adding protein Beneprotein: 1 scoop (1 ½ Tbsp) powder provides- 6 g of protein (Whey protein isolate [Milk]) 35 mg potassium 15 mg phosphorus NovaSource Renal: (per 100 mL) - 7.4 g protein (milk protein concentrate) 81 mg potassium 65 mg phosphorus *Ensure Plus: (per 100 mL) – 5.7 g protein (milk protein concentrate) 195 mg potassium 105 mg phosphorus *Boost: (per 100 mL) - 4.3 g protein (milk protein) 210 mg potassium 120 mg phosphorus * Ensure plus and Boost are higher in potassium and phosphorus 5 .

    Early Implementation Allowances 4: Tofu and Soy Yogurt as Meat Alternates Tofu and soy yogurt products are allowed to be used to meet all or part of the meat/meat alternate component. • Tofu is a soybean-derived food. Basic ingredients in tofu are whole soybeans, one or more food-grade coagulants, and water. Noncommerial tofu and soy products are not creditable. • 2.2 ounces (1/4 cup) of commercially prepared tofu, containing at least 5 grams of protein, is creditable as 1 ounce equivalent meat alternate. • 1/2 cup (4 uid ounces) of soy yogurt is creditable as 1 ounce equivalent of meat alternate. • The most appropriate way to ensure that the product meets these requirements is a product with a Child Nutrition Label (CN Label) or a Product Formulation Statement (PFS) • Firm or extra rm tofu in stir-fries, omelets, and miso soup may credit towards the meat alternate component. • Soft or silken tofu incorporated into drinks, such as smoothie or other dishes to add texture or imporove nutrition, such as in baked desserts, does NOT credit toward the meat alternate. • Until the Food Buying Guide for Child Nutrition Programs is updated, the following yield information can be used for purchasing and crediting: • 1 pound of tofu with 37 grams of protein will have 7.28 quarter cup servings per pound and provide 7.25 ounces of equivalent meat alternate. Balanced nutrition (1) includes drinking plenty of clean water and regularly eating foods from each of six food groups: grains, vegetables, fruits, milk products, meat and beans, and oils. These foods contain six kinds of nutrients: proteins (2), carbohydrates (3), fats (4), minerals (5), vitamins (6), and water (8). A person should regularly eat or drink enough of all of these nutrients to grow and remain healthy. For infant nutrition (8), mother’s milk itself provides an ideal balance of nutrients, with the gradual introduction of solid foods after four to six months of age. If a variety from all food groups is eaten regularly, it is not usually necessary to take supplements (9). Even carefully chosen vegetarian (10) diets that include dairy products or eggs can be quite sufficient. But if little or no animal products are eaten, then grains must be eaten with legumes (beans, peas, peanuts, and lentils), nuts, and seeds to provide balanced protein. Food and drink must also be clean and free from disease-causing germs (bacteria, viruses, and parasites) to be healthy. Purified water (10) (potable water) is prepared by removing dirt from the water and treating the water to remove or kill germs. In some areas, the government purifies water that is delivered through secured plumbing; this water is safe to use directly from the faucet for food and drink.

    Planting a Plant-Based Future in China: A study of China’s growing plant-based industry Erin Zhang Department of Urban and Environmental Policy Occidental College Class of 2021 ABSTRACT In 2016, the Chinese government published new Dietary Guidelines that suggested a 50% decrease in citizen meat consumption to help curb carbon emissions and reduce diet-related illnesses. This study examines whether brand marketing and consumer messaging of plant-based meats align with the intended goals of the 2016 policy, and whether the rise of plant-based meat products is related to this policy. Semi-structured interviews were conducted to examine how companies position themselves in the market and consumer perspectives were analyzed through a detailed media analysis by identifying how plant-based products were being framed pre and post COVID-19. Results demonstrate that health concepts are the utmost important message for both companies and consumers, while climate messaging holds a much lower priority. Ironically, strong trust in government is identified yet policy implementations of climate goals seem to fall short. The influence of young generations and QSR’s (quick service restaurants) are identified as a new finding in this area of research which provides implications for future messaging around plant-based products. These results imply there are disparities between the goals of the 2016 policy and the actual deliverables of the policy. It also conveys the importance of health messaging around plant-based products for Chinese consumers, which may be uprooted by the incoming generations. More importantly, it outlines the need for more climate education and understanding around plant-based products in China, as well as critical future research in this field.

    Veganism And Mi'kmaq Legends: Feminist Natives Do Eat Tofu This paper proposes a postcolonial ecofeminist reading of Mi’kmaq legends as the basis for a vegan diet rooted in indigenous culture.1 Such a project faces two significant barriers. The first is the association of veganism with whiteness. Drew Hayden Taylor has portrayed abstaining from meat as a white practice (Taylor 2000a, 2000b). In a joke at the beginning of his documentary, Redskins, Tricksters and Puppy Stew he asks, “What do you call a Native vegetarian? A very bad hunter.” Ecologist Robert Hunter (1999) depicts vegans as “eco-Jesuits” and “veggie fundamentalists,” who “force Natives to do things the white man’s way” (p. 100-113). By projecting white imperialism onto vegans Hunter enables white omnivores to bond with Natives over meat-eating. In Stuff White People Like, satirical author Christian Lander (2008) portrays veganism as a tactic for maintaining white supremacy. He writes, “As with many white-people activities, being vegan/vegetarian enables them to feel as though they are helping the environment and it gives them a sweet way to feel superior to others” (p. 38). When veganism is constructed as white, First Nations people who choose a meatless diet are portrayed as sacrificing cultural authenticity. This presents a challenge for those of us who see our vegan diets as ethically, spiritually and culturally compatible with our indigenous traditions. A second barrier to Native veganism is its portrayal as the product of class privilege. Opponents claim that a vegan diet is an indulgence since the poor must eat whatever is available, and cannot afford to be so picky.
