Fall Quinoa & Cranberry Salad Salt and pepper to Enjoy this delicious fall treat that is a gluten-free, nutrition-packed taste salad featuring broccoli, quinoa, cranberries, and walnuts. In a medium Prep Time: 15 minutes, Cook Time: 20 minutes, Servings: 6 saucepan, bring broth to a boil. Add quinoa 1 1/2 cups vegetable or chicken broth and cover and lower 1 cup uncooked tri-colored quinoa heat to simmer. Cook 1/3 cup Ocean Spray® Craisins® Dried Cranberries for 10-12 minutes. 1 cup fresh broccoli, cut into small pieces Add Craisins® Dried 2 tablespoons parsley, chopped Cranberries and cook for an additional 2 minutes.
