SPIRITS This chart shows the major distilleries operating in Kentucky, Tennessee, and Indiana, grouped horizontally by corporate owner, then subdivided by distillery. Each tree shows the type of whiskey made, and the various expressions of each style of whiskey or mash bill, in the case of bourbons. For instance, Basil Hayden’s is a longer-aged version of Old Grand-Dad, and both are made at the Jim Beam Distillery. Some of this is imprecise. Buffalo Trace has two bourbon mash bills, but it isn’t known which of its many brands are made from each, so this is a rough guess based on online commentary. Willett, formerly only a bottler as Kentucky Bourbon Distillers, has been distilling its own product for about a year; we include the brands that it bottles from other sources for reference. The ages are taken from published age statements if they exist; if they don’t, brands have been plotted in the general area where we would guess they belong.     TOP 100 SPIRITS of 2015 The best choices for your cocktail and glass this year. BY KARA NEWMAN aking the decision to double our annual Top 50 Spirits list was easy. Narrowing the list of stellar spirits down to an even 100? That was the hard part. Never before have there been so many great spirits from which to choose. It seems like I say that every year, but this year in particular, I’ve been lucky to sample a handful of spirits from distillers who’ve declared, “This bottle represents the apex of my experience.” MConsider, for example, Don Pancho Origenes Reserva Rum Aged 30 Years. After more than 50 years as a hired gun making rum for a wide range of companies, this was the rum that Francisco “Don Pancho” Fernandez yearned to bottle—and it’s delicious, redolent with toffee and spice. Another astonishing bottle: Angel’s Envy Finished in Port Wine Barrels, a sip-worthy magnum opus Bourbon from the late Lincoln Henderson. It’s difficult to not be in awe of these distillers. And as a critic, I’m deeply appreciative of their work. It’s also impossible not to declare the spirits class of 2015 as the best and brightest yet. Then again, there’s always next year.     BY JEFF BOOK APPLE DISTILLED THE SPIRITS INDUSTRY TAKES A CUE FROM CIDER ust as the craft beer boom paved the way for a cider revival, so the rise of craft whiskey and J other grain spirits has boosted interest in liquor from fruits other than grapes. For cidermakers, it’s a natural evolution—once you’re fermenting something, why not distill it too?—though not a simple one. Would-be fruit distillers need a new skill set and costly distilling equipment. Government regulations are more stringent for distillers than brewers (due in part to the higher tax on spirits) and rules vary from state to state. And as with all artisanal adult beverages, the market is increasingly competitive.
