Wine is nothing if not enjoyed in the company of others. At its base level, it is simply fermented grape juice, but what a magical thing that wine transcends its physical form. At its best, it is a unique expression of millions of years of geological and anthropological events, all culminating inside your glass. Beyond its physical beauty, wine has a spirituality and mysticism which allow it to bring people together, whether in a business deal, a birthday celebration, or a reunion of long parted friends. Situated on a sliver of limestone and sand across the North of France, a unique production method was developed. Secondary fermentation in the bottle, creating bubbles, initially happened as an accident. Bottles would explode for seemingly no reason, puzzling the monks who were primarily drinking the wine. With advances in science leading to stronger glass for bottles, as well as greater understanding of fermentation, Champagne eventually embraced it’s sparkling identity. Today, there are large negociant companies and small growers who are both producing spectacular versions of this delightful, regional specialty.
