Cinnamon Sugar Donut Bites Makes 18-27, mini muffin sized donut bites Makes Makes Ingredients (18) (27) Donuts all-purpose flour 1 C 1 ½ C baking powder 1 t 1 ½ t cinnamon ¾ t 1 ⅛ t allspice ¼ t ⅓ t ginger ¼ t ⅓ t nutmeg ¼ t ⅓ t salt ¼ t ⅓ t unsweetened applesauce ⅓ C ½ C sugar ⅓ C ½ C eggs 1 ½ 2 vanilla extract ¾ t 1 ⅛ t milk ⅓ C ½ C Cinnamon Sugar Coating sugar ⅓ C ½ C cinnamon 2 t 1 T unsalted butter, melted 4 T 6 T Instructions Preheat oven to 350 degrees. Thoroughly grease a mini muffin tin and set aside. In a medium bowl, whisk together dry ingredients: flour, baking powder, cinnamon, allspice, ginger, nutmeg, and salt. In a large bowl, with an electric mixer or by hand, cream the applesauce and sugar until sugar is fully incorporated into applesauce. Add eggs into applesauce mixture, one at a time, mixing well after each addition. Scrape down the sides of the bowl as needed and mix in the vanilla. Add dry ingredients and milk to the wet mixture, alternately, beginning and ending with dry ingredients. Mix until incorporated after each addition. Be sure not to over mix. Using a mini cupcake scoop, fill prepared muffin cups with donut batter. Bake until firm and donuts spring back when touched, about 8-10 minutes, rotating pan once if needed. Transfer to a wire rack; let cool in pan for 5 minutes.
