1 package of Oreos (good with

the mint)

1 of cream cheese Powerballs 4 oz. baking chocolate bar (white By Hope Hylinski or dark)

Crush Oreos in food processor. 1 cup peanut butter Add softened cream cheese. Mix in Oreos. Make sure they are 1 cup honey mixed in well. Form into balls. 3 cups old fashioned oats Melt 1 pkg of baking chocolate. Dip balls in melted chocolate. 1/2 cup ground flaxseed Refrigerate balls until the truffles 1 cup chocolate chips harden.

Stir together peanut butter and honey Have fun eating! until smooth. Add oats and flaxseed and mix in chocolate chips. Roll mix- ture into golf-ball sized balls and put in Avocado Lime Cheesecake mini muffin paper for less mess. The 2016 season will feature 10 Friday Night Fireworks games, presented by News Talk 1110 WBT, 107.9 The Link, and BB&T. The third season at BB&T Ballpark also consists of 11 home games on both Saturday and Sunday. New in 2016, all Saturday home game times will be moved up an hour from 7:05 to 6:05 p.m. Sunday games will start at 2:05 p.m. from April 17 to July 10. The final four will be evening starts.

Specialty games featuring the 11th Annual Pink Knights game, Military Tributes, including a Memorial Day game (Thursday, May 30), and a Father's Day celebration (June 19) headline a preliminary list of promotional dates.

Tickets for the 2016 All-Star season, including the 2016 Triple-A All-Star Game, are on sale now! Reminders about Eastover “Testing Mode”…….May 23—June 7

—the building will be closed to adult/parent volunteers and/or visitors from 8:15 am - 1:15 pm each day.

—only students, staff and volunteer proctors will be allowed in the building from 8:15 - 1:15 each day.

—all student lunches will be closed to outside visitors.

—check-outs for students in grades 3-5 need to take place after 1:15 pm. If your child is in a testing site and needs to be checked out before 1:15 pm, you will need to speak to Dr. Nichols directly in order not to disrupt testing and come up with a plan of action.

—any emergencies requiring adult/parent needing access to the building from 8:15 am –1:15 pm, will be addressed individually by school administration either in person or over the phone.

Kiss the Pig Celebration Do you celebrate Cinco de Mayo? If so, do you know the history behind this day? 5/27...No school. Teacher Work Day The 5th of May commemorates the Mexican army’s 1862 victory over France at 5/30….Holiday, No School the Battle of Puebla during the Franco-Mexican War. Don’t be fooled tho. Most people think it is Mexican Independence day. (its actually celebrated September 6/9...Last Day of School, 5th grade 16) Cinco de Mayo is a relatively minor holiday in Mexico, but in the U.S. Cinco Graduation @ 9 am de Mayo has evolved into a celebration of Mexican culture and heritage particu- larly in areas with large Mexican-American populations. Cinco de Mayo tradi- tions include parades, mariachi music performances, and street festivals in cit- ies and town across the US and Mexico.

Cheesecake continued………..

1. Heat cream in small saucepan until small bubbles appear around the edges. Remove from heat and stir in sugar until it dissolves. Transfer to med. Bowl until cool.

2. Combine avocado and cream cheese in food processor until smooth. Add lime juice and process until cool. Whisk into cooled cream mix- ture.

3. Fill an ice cream maker with the avocado mixture and freeze according to the manufacturers directions.

4. Spoon avocado mixture into the prepared pie crust; smooth surface with spatula. Freeze until solid, at least 2 hours. Let cheesecake sit at room temp until slightly softened yet firm enough to slice, approx. 10- 15 minutes. ENJOY!
