CHEF’S At Veritas, we continue to take advantage of fresh summer CORNER produce, cheeses and seafood. One example is our Heirloom Tomato Salad, in which every ingredient is grown or made locally. A favorite at the Club, we use several varieties of heirloom tomatoes and give them a quick marinade with champagne vinegar and locally sourced honey, enhancing the tomato flavor. We pair the tomatoes with Vermont goat cheese and locally grown baby vegetables. We add grilled peaches from Fairmont Farms in Franklin, giving it a warm and almost savory finish. Heirloom Tomato Salad For the entire month of September, we are featuring local seafood specials in Veritas every week, Thursday through Saturday nights. We’ll feature dishes such as lobster tacos with grilled corn and scallops with rock shrimp and fresh English peas. See page 4 for all of the seafood dishes. At the Downtown Clubhouse, we’re adding new items including roasted beet salad with haricot verts, mache, fresh horseradish and a crème fraiche dressing. We will also be showcasing a pan seared halibut with cranberry beans, sweet potatoes and a tarragon Beurre blanc. We look forward to seeing you at the Club.
