The Perfect Mix The Perfect Mix At One Square, we appreciate that the difference between a good bar and a great one is all in the details. From the Scottish Ionian marble on the bar to over 100 different varieties of gin proudly positioned behind it, we have spent considerable time perfecting the finer points. The same can be said of our cocktails, with a real emphasis on premium ingredients, well-crafted and served with style. While gin is, as you may well have guessed, something of a house speciality, our wine list has also been expertly considered, with a concise selection of our favourite reds and whites available by the glass. Why not make yourself comfortable, choose a few dishes from our Small Plates menu and spend some quality time with us? An Introduction to Gin Invented in Holland around the 17th century, Genever was originally a medicinal remedy for all kinds of ailments and was later discovered by English troops fighting in the 80 year war who marvelled at the ‘Dutch Courage’ the elixir gave them. They brought the concoction home to London where it was refined and became gin. From Gin Lane to the 1920s speakeasies, Swinging London to Studio 54 – styles may have changed but gin remains as iconic as ever. One Square Gin It’s no secret that gin is our passion at One Square, so when the opportunity arose to produce our very own small batch right here in Edinburgh we were most excited indeed. Of course, we were inspired by the 100 plus different varieties behind the bar, not to mention the many guests that have joined us for a G&T over the years. Starting with a traditional recipe, we got our heads together with our friends at Pickering’s Gin at Summerhall and selected over 15 botanicals from across the world. After all, Edinburgh, and in particular the port of Leith, has a long and rich history of global trade, so we thought it only right that this should be reflected in the end product. The result is a truly globetrotting gin, hand- made with only the finest natural ingredients. Mediterranean liquorice and orris root add a heady kick, while juniper and fragrant Scottish heather are harvested much closer to home. Notes of pink grapefruit, lime and anise are combined to create a citrusy, easy-drinking gin that refreshes and invigorates in equal measure. It is said that the Spanish were the first to use the bark of the Cinchona tree in the early 1630s when the Countess of Chinchon contracted malaria. BRITVIC TONIC / SLIMLINE 200ml 2.50 In British pubs since 1938, Britvic has expanded to be UK’s #1 still soft drink supplier and continues to develop their extensive drinks line BTW TONIC SYRUP 200ml 3.50 Hand crafted in the heart of London to a traditional Victorian recipe, BTW is a dark coloured, all-natural tonic syrup. Quinine is extracted straight from South American Cinchona bark using heat & water and no other botanicals are added, this prevents your palette becoming confused. Any gin you choose to mix with BTW becomes the star of the show. FENTIMANS TONIC 125ml 3.50 The bold and brazen flavour of lemongrass and quinine in Fentimans was made for one reason and one reason only... to mix with gin! A goal that they have most certainly achieved with a zesty tonic that is in fact a tiny bit alcoholic. Fentimans is best enjoyed with a big, flavourful gin. FEVER TREE TONIC 200ml 3.00 Using spring water and 8 natural botanical flavours including quinine imported from Rwanda and the Congo, to the bitter oranges from Tanzania, has brought about a tonic of true quality that perfectly accompanies some of the gins we serve here at One Square. The tiny champagne-like bubbles that rise help to capture the aromas of the gins and enhance their natural taste.
