The Australian sheep industry, particularly the lamb meat sector has undergone a major change in focus, such that consumer requirements are a paramount determinant for production and processing developments. This change has been facilitated by the use of cross breeding production systems where the benefits of heterosis are captured and the implementation of a performance recording system amongst initially, breeders of terminal sires. This sector of the industry has strongly embraced genetic selection using objectively measured traits and this is one of the contributors to the superior growth rate of crossbred progeny over pure bred progeny. A crossbreeding system does present challenges as it can also lead to fatter carcases depending on slaughter weight targets and thus less lean or saleable meat. This means that appropriate sire selection is mandatory. Which ever region of the world is under consideration; crossbreeding for meat production will return benefits and these will be further strengthened if the processing sector also adopts technology to enhance eating quality such as electrical stimulation and ageing.     NAILE BREEDS LISTING The North American Livestock Exposition displays many breeds of animals. Below you will find a list of breeds that are represented during the exposition. While most people in the livestock industry seem to be striving for the perfect animals, perfection is probably not quite possible today. There are so many different breeds of beef cattle and dairy cattle and swine for a variety of reasons. Different characteristics are preferred in different climates and geographic areas, for example. Human preferences for animal characteristics differ, too. Some farmers may prefer to raise leaner beef cattle to meet the demands of a specific market. Each breed has its own particular characteristics, and shows at the North American usually judge an animal against others in the same breed. The Department of Animal Science at Oklahoma State University have developed areas on their Website to give further information and a brief history of many of these breeds, plus much additional information on livestock. (www.ansi.okstate.edu/breeds) BEEF CATTLE Beef cattle are divided into shows by breed, which are co-sponsored by their breed association. Cattle are judged for breeding characteristics that vary from one beef breed to another. Overall quality and health are also very important. In a funny way, beef cattle competition is similar to human body building competition. Judges look for muscle development and minimal fat. Size is important, but extreme body characteristics are not usually favored. The profitability of the cattle – how much money they are likely to bring at market – is tied into the animal’s efficiency: how effectively it can translate grass and hay into quality meat.

    Bluefaced Leicester Breed Standard Describing Traditional White, and Natural Colored Bluefaced Leicesters HEAD The Bluefaced Leicester should have a broad muzzle, a good mouth (no overshot or undershot mouth), a Roman nose, bright alert eyes, and long, erect ears with a V-shaped earset. The cheeks should be deep with a good width under the jaw, and across the throat area. Eye color will vary from pale gold to brown, depending on the color of the animal. On a white animal, the color of the head skin should be dark blue showing through white hair. There should be no wool on the face, head or cheeks. Wool may grow right up to the throat area, especially in winter. Both sexes are polled. BODY, HINDQUARTERS & LEGS There should be a good length of neck laid into broad shoulders. The neck set is high, with the base of the neck coming out of the shoulder assembly at a more vertical angle. There should be a good “spring of rib” in the barrel with no tendency towards “slab-sidedness.” The chest should be deep and wide, and there should be no tendency towards a “pinched girth” (or extremely narrow heart girth area). The Bluefaced Leicester is known for its long, strong back; it should be level from front to back, with no significant dips (or a “rough join”) either in front of the shoulder, just behind the shoulder, or at the join between the back and pelvic girdle (in the loin, or sacro-lumbar region). The shoulders should be broad and well-rounded, with the shoulder blades meeting very close together at the withers.
