BEEF AND BROCCOLI CAULI-RICE Yield: Serves 4

INGREDIENTS INSTRUCTIONS 1 large head cauliflower, • Cut the cauliflower into small florets and place grated (about 4 cups) in the bowl of your food processor. Give it a few quick ¼ cup coconut oil, divided pulses (about 10 to 15) until it resembles the texture of rice. 4 oz. mushrooms, sliced Alternatively, you could also use a box grater or the grater 2 cups small broccoli florets disc of your food processor. 1 large onion, chopped • In a large wok set over high heat, melt 2 tablespoons of the coconut oil. Cook the ground beef until it’s almost completely brown,then add salt, 2 bird’s eye chili peppers, finely chopped pepper, five spice, ginger, chili peppers, fish sauce, coconut aminos and rice vinegar. ¼ cup coconut aminos Stir well and continue cooking until the beef is cooked through, then stir in cauliflower. 2 tablespoons unseasoned rice vinegar • Lower the heat to medium and continue cooking, stirring often, until the cauliflower 1 tablespoon fish sauce is soft but retains a bit of crunch, about 5 minutes. ¼ cup sliced blanched • Meanwhile, toast the sliced almonds in a dry skillet set over medium heat, until golden and fragrant. almonds, toasted • Add the reserved veggies and almonds to the beef and cauliflower, stir to combine and serve.
