USA 99164-6376 Abstract A comparison of the fatty acid, amino acid and proximate composition between the roe of wild and cultivated beluga (Huso huso) sturgeon from Iran are presented here. The fatty acid profile varied between wild and cultivated sturgeons but there was no differences observed for proximate composition and amino acid profile. The wild sturgeon roe contained higher amounts of n-3 fatty acids particularly eicosapentaenoic acid (20:5n-3, EPA) (wild: 2.9%, cultivated: 1.24%) and docosahexaenoic acid (22:6n-3, DHA) (wild: 5.1%, cultivated: 2.38%). Linolenic and linoleic acids were the predominant fatty acids in roe from cultivated beluga, a reflection of diet and also a likely physiological adaptation to a higher temperature environment. Low levels of PUFA in cultivated sturgeon negatively affected fertilization and hatching ratios which were significantly lower than for the wild fish. Hence, in order to culture beluga, feed with higher fatty acid with more n-3 is necessary to reach high quality roe and fertilization and hatching ratio. -

REVA WOLF Goya’s “Red Boy” The Making of a Celebrity R W Reva Wolf came to study with Jonathan Brown when, as a student in his seminar on Francisco Goya, she discovered the topic of her Ph.D. dissertation. Brown served as co-advisor with Robert Rosenblum for the dissertation, entitled “Francisco Goya and the Interest in British Art and Aesthetics in Late Eighteenth-Century Spain”, which Wolf defended in . Growing directly out of this Ph.D. work was Wolf’s book and exhibition, Goya and the Satirical Print (). She also wrote one of her two Master’s degree qualifying papers, The Hall of Battles at El Escorial, under Brown’s guidance. Her first professional writing assignment, the essay “Onlooker, Witness and Judge in Goya’s Disasters of War,” for the catalogue of the exhibition Fatal Consequences: Callot, Goya, and the Horrors of War (), was due to Brown’s recommendation. G.M. PALATNIKOV, R.U. KASIMOV STURGEONS – CONTEMPORARIES OF DINOSAURS BAKU – 2010. INTRODUCTION TheCaspian Sea is abundant with its natural unique gems, the most famous being sturgeons and oil. But, as the old wisdom says, wealth alone will make no one happy, especially if used without thinking of future. All natural resources can be categorized as renewables and nonrenewables. Renewables are such resources that can regenerate through reproduction or through the nature renewal cycles over the time frame comparable with the pace of huuman economical activity. Examples of such resources are sturgeons. Nonrenewables are such resources that cannot regenerate over the natural cycle over the time frame comparable with the pace of human economical activity. Oil reserves are such nonrenewable resources. Oil has now been actively developed and produced. Big money is being spent for the development of hydrocarbon exploration, production and transportation technologies. But hydrocarbon reserves sooner or later will deplete. As for sturgeons, their stock is being gradually decreased because of irrational catch, reduction of feeding and spawning areas, and contamination of the water environment - and oil industry has contributed greatly to it. However, this problem has currently not been addressed properly although preservation of sturgeon reserves requires less investment but promises continuously high profits at all times. Unfortunately, not everyone, including those who live at the Caspian Sea, understands this. Most people have insufficient knowledge about sturgeons, but view sturgeons as a source of food. We will try to inform the readers about the life of this unique fish. We will tell you the following: What are these species that have left such a noticeable footprint in the history of mankind? What y interest (other than being a source of food) do they present? Balestrieri NEW YORK CITY — A great portrait is a balancing act between capturing likeness and revealing inner character, between fidelity to appearance — verisimilitude — and exposing the sitter’s inner light to the light of day: the eyes of beholders, viewers, us. But in great portraiture there is another requisite element: mystery. The portraitist must hint at something else, something other, something that shimmers at the surface — often in the eyes, mouth or hands of the sitter — a moment that passed, perhaps, between the artist and the sitter, a secret we suspect but can never fully be in on. “Cardinal Guido Bentivoglio,” 1623, oil on canvas. The simplest answer is that when a portrait moves us to try to bore into it, to decode its subject, the sitter, time and again, that mystery is present. But there is a more scientific method. If collectors and cultural institutions, over a lengthy period, single out, vie for and prize portraits of people they could never have known, people they have no relation to, people whose names may well be lost or mean little to history, then we may be sure that the artist has captured lightning in a bottle. When this is evident, as in the case of Flemish painter Anthony van Dyck (1599–1641), new questions emerge about the production and consumption of portraits, and about their place and meaning in disparate cultures over time. With more than 100 of the artist’s works in the exhibition “Van Dyck: The Anatomy of Portraiture,” on view at the Frick Collection until June 5, opportunities to consider these questions abound. -

Although Belarus, China and Norway are currently considered as the main exporting countries of caviar and its substitutes but, Iran solely exports caviar from sturgeon species. Having a world reputation in caviar brand, as well as the decreased natural resources, Iran aims to develop sturgeon rearing as well as modern marketing along with global standards to stand its brand and reputation as well as its world market share. The present paper reviewed the caviar and caviar substitutes market with emphasis on sturgeon caviar. During 1991-2013, caviar export from Iran decreased by 21.2 % in quantity and decreased income by about 17.2 %. However, the caviar value increased from 231000 to 680000 USD per ton. -
Anaphylaxis to Beluga Caviar
CASE REPORT Asian Pacific Journal of Allergy and Immunology Anaphylaxis to Beluga caviar Sébastien Lefèvre,1 Laurianne Moumane,2 Sandrine Jacquenet,3 Etienne Beaudouin1 Abstract Fish roe is an extremely rare cause of anaphylaxis and although its consumption has increased in recent years. We de- scribed the case of a 59-year-old man, who experienced an anaphylactic reaction after consuming caviar. Skin prick-test were performed with Beluga caviar, salmon caviar, cod, salmon, hen egg yolk and egg white, ovalbumin, ovomucoid, shrimp and mold. Only SPT to Beluga caviar was positive. The absence of sensitization to fish and hen egg was confirmed by undetectable specific IgEs to cod, parvalbumin (Gad c 1 and Cyp c 1), egg yolk and egg white, ovalbumin and ovomu- coid. An immunoblot was also performed and showed an IgE-reactive band indicated that the patient was sensitized to a 26 kDa protein in Beluga caviar. In the present case, immunoblotting of the patient’s serum revealed a single IgE-reactive band at 26 kDa band, which does not appear to correspond to the previous cases.
