Quinoa and Kale Salad Swedish Meatballs

2 cups cooked quinoa, 1 pound ground beef 2 cups finely sliced kale, Garlic to taste 1/2 cup shredded carrots, 1 small onion, diced small 2 tablespoons pumpkin seeds, Salt & pepper 1/4 - 1/2 cup dried cranberries 1 teaspoon each of allspice and nutmeg Mix well. Mix and form into bite size meatballs, fry or bake until medium. Dressing: Sauce for appetizers: 1/3 cup grape seed or olive oil 1 jar grape or wine jelly 1/4 cup wine (Rosato di Barbera) 1 bottle (8 oz.) cocktail sauce or ketchup Juice from 1 lime or lemon 1 cup wine Salt & pepper Heat sauce and pour over meatballs. Keep in a crockpot on low. Garlic seasoning (I like Garlic Dude Dust) to taste. Sauce for dinner: Pour over quinoa mixture. 1 can cream of mushroom soup People usually only take a large spoonful so 1 cup water this easily serves 8-10 people. 1 cup wine 1/2 teaspoon nutmeg Southwestern variation- cook quinoa with a little taco Salt & pepper seasoning, substitute black beans or kidney beans and Garlic to taste roasted corn for the cranberries. Add some of the taco

seasoning to the dressing. You can also make your own mushroom gravy. Serve this over rice This is great with a steak. or with potato pancakes. Pair with Olof Cellars Rosato di Barbera Pair with Olof Cellars Barbera
