the dj, the music and you by DJ Res-5 Fahrenheit 9/11: An inquisitive look at new pop Sometimes I wonder what goes through the minds of the music-buying public. I mean, I full well understand why songs like Jay-Z’s new entry, “Run This Town” be- come hits. However, when I see a Miley Cyrus song like “Party In the USA” at number one with its awesomely auto-tuned vocals, canned dance production, and sub- par lyrics I can’t help but wonder and worry. Why not just upgrade to Cascada people?

Another noodle-scratching hit- maker this week would be 30H!3. With “Starstrukk” and “Don’t Trust Me,” they have a little more going for them than Miley due to the fact that the production is super tight on both. However, when a band wants you to “do the Helen Keller,” —as she was both blind and deaf—I need to take a moment to pause and evaluate. While I am guilty of enjoying “Clint Eastwood” and “Dare” by the Gorillaz, is this really the road we should all be drifting down? I am not saying everything needs to be thought out and put together as well as “Good Girls Go Bad” by Cobra Starship, but still... .

Just so this column is not a complete bitch-fest about unintelligent songs that also happen to be popular, I will say I have a soft spot for the Johnny Vicious mix to “Celebration” by . The has an excellent and urgent feeling that makes me want to dance like there’s no tomor- row (pardon the pun). Ra n d y Pu b e r t : Did y o u a l w a y s w a n t t o b e a c h e f ? Art Smith: Where I come from they are farmers. They work a lot so they eat a lot. Food has always been an important part of working. I have always enjoyed it. Everyone loves someone that feeds them.

RP: Yo u a r e f r o m Fl o r i d a o r i g i n a l l y ; h o w d i d y o u d e c i d e t o l i v e in Ch i c a g o ? AS: I worked for a governor at a very young age, 21. He introduced me to the whole wide world. I had cooked on yachts before so I started working on trains and that brought me to Chicago.

RP: Ho w d i d y o u m e e t Opr a h Wi n f r e y ? AS: I met Oprah through her hairdresser Andre Walker.

RP: Wh a t w a s it l i k e w o r k i n g f o r “Th e Big O?” AS: It was no different than working for any other head of a big corporation. They are busy people. You are there to lend a hand, to make their lives more comfortable. When you are busy the last thing you want to think about is what you are going to eat. It’s nice to have someone to take care of you.

RP: Wh a t w a s t h e m o s t challenging p a r t o f b e i n g o n Br a v o TV’s To p Ch e f Ma s t e r s ? AS: Being under the gun is not easy. You don’t have a lot of time to think. Truly the best part was working with Magical Elves Productions that does Top Chef. It clearly is like food porn with all those different angles!

RP: No w y o u a r e s p e a k i n g m y l a n g u a g e . AS: So you get it. They were very sensitive to the food where it wouldn’t sit there forever. Truly in television, the more authentic you are, the better. People want to see the pain and see your life on the plate.

RP: Wh a t a r e y o u w o r k i n g o n r i g h t n o w ? AS: My partner Jesus and I have been working on our charity called “Common Thread.” We opened it here in Miami. A family bought a dinner that I did with Michelle Bernstein for ten people for $10,000. Their favorite things were the grits and the hummingbird cake.

RP: Yo u h a v e c o o k e d f o r Pr e s i d e n t Ba r a c k Ob a m a ? AS: Many times, three times since he has been in office.

RP: An y suggestions f o r n e w c h e f s ? AS: When you step out there make sure that you are on the right stage with the right person. That first big job will dictate the rest of your career. I stepped in when Mikhail Baryshnikov was in town and the governor had no chef. It may have not been the best thing I have ever made but it was good and it got me the job. I have never gotten a job from a résumé. It has always been word of mouth.

RP: Wh a t a n a m a z i n g l i f e y o u h a v e h a d s o f a r . AS: You only live life once and you have plenty of time to rest when you are dead.
