Lowry's seasoned salt 1 Tbsp. dill weed Mix together and chill. Serve with veggies. Toss with rice vinegar, salt, and Vz teaspoon garlic salt. Cover and chill 8 hours. Drain w cucumber mixture well, pressing between paper towels. w Beat cream cheese, mayonnaise, and remaining V2 teaspoon garlic salt at medium speed with an electric mixer 1 to 2 minutes w or until smooth. Stir in cucumber mixture and chives. Cover and w chill at least 1 hour. Garnish, if desired, and serve with pita chips. Makes 3 cups. Bake w at 350° for 20 to 25 minutes. Garnish with tomato and green onion. 2 A p p e t i z e r s a n d S n a c k s w dpinach Artichoke Qip Nancy Hildebrant Incredible, low-fat appetizer. Perfect for any party or appetizer for a great meal. Very creamy, cheesy, and fully of robust flavor. 2 cups mozzarella cheese 1 (14 oz.) can artichoke hearts, Vz cup nonfat sour cream drained and chopped Va cup grated Parmesan 1 (8 oz.) pkg. reduced-fat cheese cream cheese 1 (8 oz.) pkg. fat-free cream 14 tsp. black pepper cheese 3 cloves garlic, crushed 5 oz. frozen chopped spinach Tortilla chips Preheat oven to 350°. Combine 1 Vz cups mozzarella cheese, sour cream, 2 tablespoons Parmesan, and next 6 ingredients. Blend well. Spoon mix into baking dish. Sprinkle with Vz cup mozzarella and 2 tablespoons Parmesan cheese. Bake for 30 minutes. Serve with tortilla chips or browned pita wedges. Makes 6 servings. (Spinach Cheese tyip Trad Horany 1 (10 oz.) pkg. frozen chopped 2 cans Ro-Tel, 1 drained and spinach, thawed and well 1 undrained drained 12 oz. Mexican blend grated 1 (8 oz.) pkg. cream cheese, cheese room temperature Vz cup sour cream Vz white onion, chopped Vz tsp. chili powder %-14 cup fresh or canned Va tsp. cumin (optional) jalapenos, chopped Combine all and bake at 350° for 30 minutes until hot and bubbly. (Can also put all ingredients in crockpot.) Appetizers and Snacks 3 (Savory (Strawberry & (Spinach Qip Jessica Hildebrandt 6 oz. reduced fat cream cheese y3 cup thinly sliced scallions 4 oz. crumbled Feta cheese 1 cup chopped, fresh spinach (may substitute reduced fat) 1 Cup chopped, fresh !4 tsp. grated lemon zest strawberries 3 Tbsp. chopped walnuts Dash of freshly ground black pepper Preheat oven to 350°. Spray a 6-cup oven-safe casserole dish with nonstick cooking spray. Set aside. Mix all ingredients in a medium-large bowl until combined. Transfer mixture to prepared baking dish and bake for approximately 25 minutes until bubbly and slightly browned on top. Remove and let stand for about 5 minutes. Serve warm with whole-grain crackers or pita chips. Makes approximately 6 servings. ^omatillo (Salsa Trad Horany Good as a salsa with chips or served over any white broiled fish! % lb. tomatillos, husked, Vz cup packed coarsely rinsed, and chopped chopped fresh cilantro 1 j a l a p e n o p e p p e r s t e m s a n d l e a v e s ( o p t i o n a l ) 2 cloves garlic, peeled Juice of 1 lime 14 cup chopped white onion Vz tsp. salt Vz tsp. coarsely ground black pepper Put tomatillos, pepper, and garlic on a rimmed baking sheet and broil 5 inches from heat, turning occasionally, until lightly charred, 7 to 8 minutes.
