Day 2 The city of Hyderabad was constructed in 1591 by King Hyderabad Muhammad Quli Qutb Shah of the Qutb Shahi dynasty, which ruled this region of the Deccan plateau from 1507 to 1687. During this time, the Sultanate faced numerous incursions by the Mughals and the Hindu Marathas. In 1724, the Mughal governor of the Deccan arrived to govern the city. His official title was the Nizam- ul-Muluk, or Administrator of the Realm. After the death of Emperor Aurangzeb, he declared his independence and established the Asaf Jahi dynasty of Nizams. The Nizams of Hyderabad were known for their tremendous wealth, which came from precious gems mined in nearby Golconda (see Day 3), the area's natural resources, a vibrant pearl trade, agricultural taxes and friendly cooperation with the British. Much of the architecture still existing in Hyderabad thus dates from the reigns of the Qutb Shahi Sultans or the Nizams. European influences were introduced by the British in the 19th and 20th centuries. At the center of old Hyderabad sits the Charminar, or "four towers," which dates to 1591 and is surrounded by a lively bazaar and numerous mosques and palaces. This morning we will enjoy a leisurely walk through the area. We will stop to admire the colorful tile mosaics found inside the Badshahi Ashurkhana. This Royal House of Mourning was built in 1595 as a congregation hall for Shia Muslims during Muharram. -

Sometime Biriyani is accompanied with a form of curd. The original dish is done with red meat but chicken, fish, prawns or vegetables can be used for some variations. Hyderabadi biryani is of two types: the kachchi (raw) biryani, and the pakki (cooked) biryani. A biryani is usually served with dahi chutney and mirchi ka salan. Baghaar-e-baingan is a common side dish. The salad includes onion, carrot, cucumber, and lemon wedges. Hyderabad City: History & Tourism Hyderabad is the capital city of the state of Telangana and Andhra Pradesh of South India. The city was founded on the River Musi by Muham- mad Quli Qutab Shah in 1591. The city is located on the Deccan Plateau and it is the fifth largest city of India. This cosmopolitan city is richly endowed with a variety of cultures. The city presents an attractive amal- gam of old world charm together with new world of hi-technology. Hyderabad city has a history of nearly four hundred years. All its began with the establishment of the Qutub Shahi dynasty. Quli Qutub Golconda Fort Shah seized the reins of power from the Bahamani Kingdom in 1512 and established the fortress city of Golconda. The history of Golconda goes back to the Kakatiya Dynasty in 11th century when they built a mud fortress on a hill called Golconda. Inadequacy of water, and fre- quent epidemics of plague and cholera persuaded Mohammed, the fifth Quli Qutub Shahi ruler to ven- ture outward to establish the new city with the Charminar at its cen- ter and with four great roads fan- ning out in the four cardinal direc- tions. The capital of the city was Bhagyanagar, which named after a royal beloved Bhagyamati. As she Charminar became the wife of Quli Qutub Shah, the sultan bestowed the title of Hy- 1 der Mahal on Bhagmati and thus was born Hyderabad. The Qutub Shahi rulers were great builders and patrons of learn- ing. Mohamed Quli Qutub Shah built the mosque, whose construc- tion began in 1614 and Aurangazeb completed it in 1687. -

I was a bit disappointed finding it in huge variance from the way Hyderabadi food is made. The most famous thing is Hyderabadi Biryani, if it is made good makes your acids flow from a mile away its aroma pervades a town literally. It is so good. But if one would make it the way she says it would be difficult to achieve that result. Same with so many other recipes. If it is authentic Hyderabadi recipe I would love it. Wish somebody does a genuine true Hyderabadi cuisine book. Our ancestors learnt many things from their predecessors. With the passage of time they also added to it from their own experience and gave up those which they did not consider useful. We in turn have learnt many things from our ancestors. As time goes we continue to add new thoughts, new ideas to those already existent and sometimes we give up some which we don‘t consider useful any more. This is how culture is transmitted and carried forward from generation to next generation. The culture we inherit from our predecessors is called our cultural heritage. Originating from different national, ethnic, religious, social and economic backgrounds, the migrants contribute to the urban life, thus effecting cultural change. There has been lot of debate and discussion about the origin and authenticity of “biryani”. Some believe that biryani belongs to Mughal Darbar, while others reckon that it was Awadh Durbar that gave old pilaaf (pulao) a twist to create biryani. Fans of Deccan food, don’t even want to join the discussion, because for them anything other than Hyderabdai Kachhi biryani is not worth consideration. This paper focuses on the genesis, emergence and transformation of Hyderabadi Cuisine and the historical significance of its presence in gastronomical world. Since then Indians have been in contact with several European nations. Despite the advent of the Europeans, the Deccani Muslim elite that ruled much of inland peninsular India from around 1300 to 1800 were dimly aware of Bilad-i Afranji, or the land of the Franks, the generic term for Europeans in general. Surviving maps of medieval and early modern India show no European country by name except Portugal. In one particular map, Holland, named as Walandiz is described as an island situated north of England, whereas the British Isles are called Ingriz.1 While ancestral and kinship ties, religious and cultural affiliations, pilgrimage and trade tied Islamic Deccan to the Dar al-Islam to the west and north, territorial or geographic Europe was nearly unknown to the ruling elite in spite of the large European trading fleets, commercial settlements on the coast and travelers in the interior.2 Like their north Indian Mughal counterparts, Muslim elite that ruled the Deccan received their share of European travelers into their domains, whether as merchants of luxury goods, jewelers, physicians, horse dealers, and gunsmiths exemplified by the cases of Ludvico de Verthema, Niccolo Conti, Niccolao Manucci, Jean-Baptiste Tavernier, Afanasy Nikitin, Francois Bernier, John Fryer, and Dutch physician Peter de Laan at Golconda.3 Jesuits * MIT, 237-8, Cambridge, MA 02139, America. -

It is heavily influenced by Turkish (Biryani), Arabic (Haleem), Mughlai and Tandoori, with considerable influence of the spices and herbs of the native Telugu and Marathwada cuisine. Hyderabadi Cuisine could be found in the kitchens not just in Hyderabad city, but areas belonging to the former Hyderabad State that includes Telangana region, Marathwada region and Hyderabad Karanataka region. Hyderabadi Cuisine also contains city specific specialities like Aurangabad (Naan Qalia), Gulbarga (Tahari), Bidar(Kalyani Biryani) etc. The cuisine is special because of the use ingredients that are carefully chosen and cooked to the right degree and time. Utmost attention is given to picking the right kind of spices, meat, rice etc. Therefore, an addition of a certain herb, spice, condiment, or combination of all these add a distinct taste and aroma. The key flavours are of coconut, tamarind, peanuts and sesame seeds which are extensively used in many dishes. The key difference from the North Indian cuisine is the presence of dry coconut and tamarind in its cuisine. Traditional utensils made of copper, brass, earthen pots are used for cooking. All types of cooking involve the direct use of fire. There is a saying in Hyderabad, cooking patiently or ithmenaan se is the key; slow-cooking is the hallmark of Hyderabadi cuisine. The Slow-cooking method has its influence from the Dum Pukht method used in Awadhi cuisine.
